Delivered Friday; I've been meaning to post. I noticed there remained a few Mexico and a Decaf from the week before (possibly still there?)
"Honey" is a designation referring to a semi-natural process. As with natural process, the fresh-picked coffee cherries are spread out on patios or raised beds, to ferment a few days and soften them, allowing easy bean removal. The fermentation contributes to the taste profile, resulting in mild earthiness and interesting fruit tones. Natural process is the traditional method. The modern, faster, and now more common way, is to use cherry-pitting machinery, which produces a brighter, more acidic cup. The "semi-natural" or "honey" method, ferments the same way as natural, but more briefly. This Organic Nicaragua Jinotega Honey has pleasant, malty and citric notes.

July 6, 2023: Whoops, I keep meaning to say: I delivered some fresh coffee this week. I'm trying out small batches of different kinds. This time it's a Costa Rica, a Columbia, and a Decaf Peru, all organic.
Sorry about the long absence! Most of June was taken up with an emergency trip.
I'm enjoying the Costa Rica and the Columbia. The Decaf Peru seems milder than I'd prefer.
Here's more about the varieties, with tasting notes from BurmanCoffee, from whom I bought the green beans:
Costa Rica Finca Amastad Org.: Sweet, floral, nutty.
Columbia Tolima La Exelencia Org.: Chocolate, nutty, spice, floral.
Decaffeinated Peru Org. Royal Select, Mexican Water Process: Chocolate, floral, semi-sweet.
