You’ll love the spices and herbs on this adventurous Potato and Olive Quiche. 🥔 Gluten-free, dairy-free, and vegetarian - this recipe is allergy friendly and easy to swap ingredients. You can also substitute the potatoes for winter squash if you're sensitive to nightshades!
- 1 pound potatoes (Yukon Gold preferred)
- 6 eggs
- ¼ pound olives (about ¾ cup), in herbs and olive oil
- ½ cup roasted red peppers, chopped
- ½ cup coconut cream
- 3-4 tbsp sesame seeds
- ½ tsp sea salt
- ½ tsp dried oregano
- ½ teaspoon sumac
- ¼ teaspoon cumin
- black pepper
Boil potatoes with sea salt until they're fork-tender through to the center. Remove from heat and drain. When cool enough to handle, cut potatoes into eighths.
Grease medium size casserole dish (any shape). Preheat oven to 375 degrees Fahrenheit.
Blend eggs, coconut cream, sea salt and pepper. Puree on medium speed until mixed, about 15 seconds.
Add potatoes, oregano, sumac, and cumin. Pulse about 5 times: do not puree the potatoes; you want small chunks evenly distributed in the egg custard.
Pour egg-potato mixture into greased casserole dish. Evenly distribute olives and roasted peppers over the surface. Garnish with extra bit of dried oregano.
Sprinkle sesame seeds around the edge of the "quiche": go around once sprinkling them on; then go around a second time repeating the motion so the layer is thick and won't sink; the custard is pretty thick, but you want a nice bit to form a noticeable crust or edge to the pie.
Bake for 30 minutes or until it's golden brown all over and slightly puffed in the center.

If healthy eating is stressing you out, making you unhappy, and interfering with your quality of life, it could have orthorexia. 👎 Orthorexia nervosa is a form of disordered eating in which one becomes obsessed with healthy eating and/or the pursuit of a “perfect” diet and quality of food. 👉 This an "all or nothing" mindset. Since diet culture upholds eating disorder behaviors as something to be celebrated, it can oftentimes be difficult to point out warning signs and symptoms of eating disorders. It may take stepping out of your community to see the big picture.
Orthorexia focuses on self-control, where healthy eating focuses on self-care and experience. 🎇 The difference comes from eating intuitively and gentle nutrition. Ask yourself, "Did I have a wide variety of foods and nutrients this week?" instead of getting caught up in the minutiae of how many calories or grams of XYZ did you have today. Gentle nutrition looks different on everyone and there is no one-size-fits-all approach - but in general it focuses on choosing foods that give you energy, opting for more nutritious foods such as whole grains in place of refined, and eating a variety of fruits and vegetables to provide the body with important vitamins and minerals. 🥗
