Ehecatl, meaning ‘wind’ is the day sign of the god of self reflection and intelligence, Quetzalcoatl. Fickle and selfish, wind is playful in its movement. It blow, guided by its whims and dreamy in its nature. Ehecatl is the day to find what feels good for you. Sour pulque, smoky mezcal, and rich peppers come together, creating a tangy salsa that pairs excellently with the light, flaky, and slightly sweet flavor of the Branzino. Instead of riding out this heat wave, pretend you’re gently gliding through the waves of the sea with your friend. Now you’re at a beach side restaurant and you’re eating a whole fish, looking it straight in the eye, as if to quell it’s anxiety over it’s looming travel into your happy belly.
