Hey Comets! Support the Comet Cupboard in raising donations to further our mission and get fresh produce to campus for students in need!
For those in need, fresh food can often be the most difficult thing to come across. Students who had not used the Comet Cupboard because it did not offer what they needed were asked to list the items they needed most. Among the three most common answers were fresh fruits and vegetables.
That is why the Comet Cupboard is using Impact UTD to raise funds for the purchase and transportation of fresh produce to our food pantry on campus!
Additional funds will also go to sending our Comet Cupboard Student Coordinator to the Universities Fighting World Hunger Conference in Fayeteville, Arkansas, to present and further our mission of ending hunger for those pursuing higher education!
Donate today using the QR Code or our link in bio!!
The Comet Cupboard will be closed for Spring Break (3/11 - 3/15)🌷 To prepare for our closure, Comets can pick up one extra item while using the Cupboard (3/4 - 3/8)!! Make sure you visit us next week- and remember that the UTD Police Department will have some Emergency Food Bags available while we are closed (while supplies last)!

– 1 teaspoon smoked paprika
– 1 teaspoon lemon zest

The Comet Cupboard still has lots of fresh celery in stock! Curious on how to use it? Here's another VEGETARIAN recipe involving celery: celery soup! A hearty and filling meal that makes the most out of what you have!
INGREDIENTS:
– 2 tbsp olive oil
– 300g / approximately 6 stalks celery sliced, with tough strings removed
– 1 garlic clove or 1 teaspoon garlic powder
– 200g / approximately 1-2 potatoes, peeled and cut into chunks
– 500ml vegetable stock
– 2 tbsp olive oil
– 300g / approximately 6 stalks celery sliced, with tough strings removed
100ml milk
– (optional) crusty bread, to serve
STEPS:
– Heat the oil in a large saucepan over a medium heat, add the celery, garlic and potatoes and coat in the oil. Add a splash of water and a big pinch of salt and cook, stirring regularly for 15 minutes, adding a little more water if the vegetables begin to stick.
– Pour in the vegetable stock and bring to a boil, then turn the heat down and simmer for 20 mins further, until the potatoes are falling apart and the celery is soft.
Use a immersion or regular blender to purée the soup, then pour in the milk and blend again. Season with salt and pepper to taste. Serve with crusty bread.
– Enjoy!
