As the winter comes to a close, so does our time with this herd of pigs. We have absolutely loved raising these Duroc/Berkshire crosses! They brought so much joy to our lives (and a bit of pain when they assisted in spraining my knee), and we did everything in our power to make sure they were happy while on our farm. Here are just a few of the fond memories we'll keep from their time here ๐Ÿ˜

Fresh eggs!!! Finally egg production is back up and we are offering fresh eggs again. Unfortunately, do to feed prices and demand, our prices are going up. A dozen chicken eggs are $7 while our duck eggs (not available again yet) will be $8. Quality feed and all day access to a mini orchard. Come get your quiche ingredients!

Once again sharing about our Duroc cross pork ๐Ÿคค
Ethically raised, well cared for pigs who have loved the pasture they had and turned the soil for the biggest garden we could imagine ๐Ÿ˜ they have loved rooting up the bushes and stumps and moving around everything, including their housing ๐Ÿ˜…
These pigs were such a wonderful addition to our farm, but it's time they fill some freezers.
They'll be leaving us at the rate of 2 every other weekend until they're all processed. If you're interested in how it works to buy our pork, please reach out! We love to have these conversations ๐Ÿ˜Š

Did you know it takes longer to hard boil farm fresh eggs?
It's also usually harder to get the shell off when peeling them.
A trick we use is adding a little vinegar to the water. Vinegar is an acid and helps dissolve a little bit of the shell while they're cooking which in turn helps the shell come off easier.
I've tried so many "tips and tricks" for getting the shells to slide off easier after hard boiling, like adding baking soda, salt, oil, etc. and the one that has actually worked is adding a bit of vinegar, then using a spoon to easily peel off the shell.

Word of the day (if you don't know what Hogget is)
Hogget is the 2nd year of a sheep's life. While still tender, a hogget's extra time on pasture allows it to develop a flavour that is richer and fuller than lamb's but not as pronounced as older mutton's. Wonderful for larger roasts, and still with an amazing flavor.
Our sheep have been finished on some beautiful alfalfa and they're ready to fill your freezer in preparation for this cold winter.

Late elderberry syrup post 2
I was always told patience was a virtue, but I've never felt as if the ways in which I was patient, counted.
But you guys are pretty virtuous for being patient with me.
*I always love when I can use the freshest, most locally grown ingredients possible.... But so often, that's not possible. So if you have dried or powdered ingredients, this is for you! And if you can sub out a thing or two for fresh, go for it!
~Kitchen witch elderberry syrup recipe~
โ€ข1 medium/large pot โ€ข cheesecloth (or a pour over coffee pot and filters)
โ€ข large spoon โ€ข mason Jar
โ€ข2 cups dried elderberries
โ€ข4 cups water
โ€ข2 cups local honey (sugar can be used instead, I've used half sugar half honey as well)

*Now play around with amounts of spices. Use as much or as little as you like, for example, I don't like Star Anise so I won't be adding it*

โ€ข2 cinnamon sticks (usually 1 powdered tbsp)
โ€ข4-6 cloves
โ€ข6 allspice (about 3 teaspoons powdered)
โ€ข1 tbsp powdered ginger
โ€ขlemon juice 1/4 cup
โ€ขjuice from an orange- whichever kind you prefer. I personally don't add premade orange juice, but if you do let me know how it turns out!

1. Boil water with elderberries 15 minutes
2. Turn down to a low simmer
3. Add all other spices
4. Take off heat and add sugar/honey, stir well to mix.
5. Pour cooled mixture into a mason jar

This concoction should last at least 2 months in the fridge in a jar, but there are variables! If you see anything that's not the elderberry syrup on the underside of the lid (black fussy stuff, black colored circles...) I usually err on the side of caution and toss it. If it happens days after you make it, swap the lid because the lid may not have been entirely clean... Speaking from experience ๐Ÿ˜…

Tis the season!
Before you yell at me, I'm talking about the common cold ๐Ÿ™ˆ
It's our youngest son's first week of kindergarten (older brother started last week), and now we're all stuck at home with balloons for heads and faucet noses.
My favorite way to get over these bugs is elderberry syrup!
Pictured here are most of the ingredients for my "fancy" syrup, but by no means do you need all of this for a good batch! Below is one of my favorite recipes, this one is for those who want to go out and Wildcraft.
Check our next post for my simple elderberry syrup it's for those just searching the cupboards and also a favorite โค๏ธ
~Outdoor elderberry syrup~
2 cups of dried elderberries
4 cups of water
1 cinnamon stick
1 large lemon
2 Mandarin oranges (or clementines)
1/2 a cup of blue spruce needles
3 stems of yarrow flowers (leaves and all)
Mullein (use your best judgement)
Ginger root (2-4 slices)
Sage Mint (I use a small handful of whole leaves, less than 1/4 cup crushed)
**1/4 cup of white pine**
2 cups local honey (or find your amount by adding 1/4 cup at a time)

(Fresh elderberries use 4 cups to 4 cups of water)

Utensils-Mesh strainer, cheese cloth, bowl, medium pot
1. In medium pot boil water and elderberries for 15 minutes.
2. Turn down to a simmer and add everything but the lemon, oranges, and honey. Let cook for 5 minutes and turn off heat
3. Let sit for 5 minutes
4. Strain everything with the cheesecloth over the mesh strainer
5. Add honey, juiced lemon and oranges and taste.
This recipe can be tweaked endlessly to your favorite flavors. Sometimes I like more cinnamon, or more orange. Sometimes I throw in a sprig of mint! The possibilities are endless!
** Personally I use Ponderosa Pine, but I do not recommend it for most people. Very few studies have been done, but it has been known to have abortifacient properties in cattle which could translate over to causing those same problems in people. If you would like to use pine please do a little research and go with a pine that you like the scent/taste of already โค๏ธ
