Anyone else love grilled veggies? Try this 30 Minute Brown Butter Goat Cheese Grilled Veggie Orzo from Ambitious Kitchen

You'll Need:
For the grilled veggies:
1-2 tbsp olive oil or avocado oil
1 medium red bell pepper, halved or cut into ½” thick strips
1 medium orange bell pepper, halved or cut into ½” thick strips
1 sweet yellow onion, peeled and quartered
1 medium zucchini, cut into ½” thick rounds or strips
1 tsp garlic powder
salt and pepper

For the pasta:
8 oz orzo pasta
1/3 c reserved pasta water
¼ c salted butter
1/2 c goat cheese crumbles
1 (15 ounce) can of chickpeas, rinsed and drained
8-10 large basil leaves, julienned
salt and pepper, to taste

How To:
First grill your veggies: preheat grill to 400 degrees. Place veggies in a large bowl, then drizzle them with olive oil, garlic powder and season with salt and pepper. Place chopped veggies onto a large piece of foil, then add another large piece of foil on top. Seal the edges by folding a piece of foil together. Use a fork or knife to poke a hole at the top of the foil to allow some steam to escape. Place over direct heat on the preheated grill and grill for approximately 10-15 minutes or until veggies are just fork tender. While your veggies are grilling make your brown butter: add butter to a large saucepan or skillet and place over medium heat. The butter will begin to melt, crackle, and then eventually foam. Make sure you stir constantly during this process. After a couple of minutes, the butter will begin to brown and turn a nice golden amber color on the bottom of the saucepan. Continue to whisk and remove from heat as soon as the butter begins to brown and give off a nutty aroma. Set aside to cool a bit. Cook your pasta according to the directions on the package. Once pasta is done cooking, reserve 1/3 cup pasta water and set aside, then drain the pasta and add it to the skillet with the brown butter. Give it a nice stir to coat all the pasta with the brown butter, then immediately add in the goat cheese and reserved pasta water; stir until goat cheese has melted. Add in the chopped grilled veggies, and generously season with salt and pepper to taste. Add fresh julienned basil. Enjoy!

Need a new smoothie recipe? Check out this Cherry Lime Smoothie from Ambitious Kitchen

You'll Need:
1 cup frozen cherries
1 teaspoon lime zest
2 tablespoons fresh lime juice
2 large pitted medjool dates
1/2 cup plain Greek yogurt
1 teaspoon vanilla
1/4-1/2 cup dairy free milk, plus more as needed
1/2 cup ice

How To:
First soak your pitted dates in 1 cup of very warm water for at least 5 minutes. This will help them soften up and perfect for blending. While the dates are soaking you can get all your other ingredients out, measured and ready. Add all ingredients to a high-powered blender: frozen cherries, lime zest, lime juice, pitted dates, Greek yogurt, vanilla, milk, and ice. Feel free to add any optional add-ins to your smoothie if you’d like. Blend until smooth, adding more milk to thin, if necessary. Pour into a glass and enjoy!

Dessert that also gets your daily servings of fruit in? Yes please! Check out how to make these Rainbow Fruit Skewers from Ambitious Kitchen

You'll Need:
6 strawberries, hulled
1 orange, peeled, segmented and cut in half
½ of a ripe pineapple, peeled, cored and cut into 1-inch chunks (about 1 ½ cups pineapple chunks)
1 banana, cut into 1-inch sliced
2 kiwi fruit, peeled and cut into 1-inch chunks
1 bar of semi-sweet or dark chocolate, vegan or dairy free if desired
Optional: flaky sea salt

How to:
Arrange fruit on wooden skewers. I like adding them in rainbow order: strawberry, orange, pineapple, banana, kiwi. Place the skewers on a large plate or baking pan lined with parchment paper or wax paper. Break up the dark chocolate bar into pieces and add it to a microwave safe bowl. Microwave in 30-second intervals, stirring in between, until the chocolate is melted. Drizzle the melted chocolate over the fruit kabobs and sprinkle with flaky sea salt, if using. Place the plate of kabobs in the freezer for 5 minutes or until the chocolate hardens. Enjoy!

Need a new summer salad? Try this Soba Noodle Salad with Chicken and Sesame from All Recipes

You'll Need:
2 tbsp rice vinegar
1 tbsp vegetable oil
1 tbsp sesame oil
1 tbsp brown sugar
1 tbsp soy sauce
2 tsp minced fresh ginger root
4 oz buckwheat soba noodles
2 tsp vegetable oil
1 boneless skinless chicken breast, cut into thin bite-size strips
1 tsp chopped garlic
salt and pepper to taste
1 rib celery, sliced
1 carrot, sliced
½ red bell pepper, chopped
¼ c chopped fresh cilantro
2 tbsp chopped green onion
1 tbsp sesame seeds

How To:
Whisk rice vinegar, 1 tablespoon vegetable oil, sesame oil, brown sugar, soy sauce, and ginger together in a large bowl until dressing is combined.
Bring water to a boil in a large pot. Add soba noodles, stir, and return water to a boil. Boil noodles until tender, 4 to 5 minutes. Drain noodles in a colander under cold running water until cool, about 1 minute. Heat 2 teaspoons vegetable oil in a skillet over medium heat. Cook chicken breast pieces until no longer pink in the center and the juices run clear, 2 to 4 minutes. Add garlic, salt, and pepper; stir until fragrant, about 1 minute more.
Toss soba noodles, chicken, celery, carrot, red pepper, cilantro, green onion, and sesame seeds together with dressing in large bowl. Enjoy :)

Seriously Good Sweet Potato Cheddar BBQ Chicken Burgers from Ambitious Kitchen, yes please!

You'll Need:
1 pound 93% lean ground chicken (or sub ground turkey)
1 cup shredded raw sweet potato (from about 1 small sweet potato)
2 tablespoons low sugar bbq sauce of choice
1/4 cup finely diced yellow onion
2 cloves garlic, minced
1/2 teaspoon cumin
1/2 teaspoon salt
Freshly ground black pepper
4 slices sharp cheddar cheese
For assembly:
4 hamburger buns of choice, toasted if desired
4 tablespoons low sugar BBQ sauce of choice, for topping
Butterhead lettuce
Sliced red onion

How To:
Make the chicken burgers by adding the ground chicken turkey, shredded sweet potato, bbq sauce, onion, garlic, cumin, salt and pepper to a large bowl. Mix with your hands until evenly combined. Divide into 4 equal portions and shape into 1/2 inch patties. Grill over medium-high heat (around 400 degrees F) for 5-8 minutes per side or until burgers are cooked through and a meat thermometer reads 165 degrees F. During the last few minutes of cooking the chicken burgers, add a slice of cheddar cheese on top of each burger patty; cover the grill for about 1 minute while the cheese melts. Place the burgers on buns, top with onion, lettuce and drizzle with extra bbq sauce and top with onions. Enjoy :)
