Perched upon a cliff overlooking the left bank of Bordeaux’s ancient meandering Durezes River stands Château Fonfroide. A cold spring on the property gives the chateau its name, and helps irrigate the 185-acre estate vineyard. History is rich here, firmly rooted in the limestone, and in the clay soil that has been both tilled, and cared for by the Dutheillet de Lamothe family for well over 300 years. Their wines are a compelling homage to the family’s deep winemaking experience.

A blend of Sauvignon Blanc, Semillon, and Muscadelle, Château Fonfroide Blanc has an absolutely beautiful pale yellow colour, with a very slight green tint in the glass. The bouquet is both expressive, and elegant, with tropical fruit notes, citrus, exotic fruits, and white blossoms like acacia. The palate is fresh, well balanced, and dry, with grapefruit notes, and a pleasant finish. It pairs perfectly with appetizers, lighter summer fare, and seafood such as scallop brochette, or salmon tartare, or even with spicier Asian inspired dishes. This wine will also complement dishes with tarragon, asparagus, shaved fennel, or citrus. Serve it chilled, and enjoy now, or choose to wait a couple of years as the profile continues to develop. Lively, round, well structured, and refreshing, it is an excellent choice for these hot summer afternoons. Cheers!

Crow Canyon produces wines with intensity, classical varietal fruit flavors, and distinct Californian terroir. Led by Christophe “Cris” Legrandjacques, their winemakers strive to craft wines that are easy to drink, and flavorful. These lots are crafted into wines that deliver wonderful texture, taste, and value.

After harvest, the Chardonnay grapes were gently pressed and fermented in stainless steel under temperature-controlled conditions to preserve the crispness and ripe fruit flavors. The wine went through a secondary malolactic fermentation for creaminess, and then was oak-aged sur lie for additional complexity and toastiness. The wine was gently filtered and fined prior to bottling.

Deep, golden yellow in the glass, the wine exudes a plethora of appetizing aromas: agave, hazelnut, cream, apple, pear, white blossom, and lemon meringue delicately spiced with dried cardamom, coriander and nutmeg. This dry, medium-bodied wine has hints of lemon mixed with tropical fruit, and light touches of vanilla throughout the palate. Pineapple notes continue on the smooth, lingering finish.

Use this white for your next dinner party. Pairs well with grilled seafood, risotto, and roasted chicken. Cheers!

Crow Canyon Vineyards, Chardonnay, California, 2022 $10.99

KWV, or Ko-operatiewe Wijnbouwers Vereniging van Zuid-Afrika (Co-operative Wine Growers Association of South Africa) is a producer in the Western Cape region. It was founded in 1918, the same year as that country's first democratically elected president, Nelson Mandela, was born. In the space of just over a century, the country, along with its wine industry, has seen many changes. KWV played a major role to unite wine producers during the industry’s fledgling years. KWV features prominently in the pages of South Africa’s history.

With access to grapes from more than 50 farms and 400 vineyard sites across the Western Cape’s Paarl, Stellenbosch, Swartland, Perdeberg, Malmesbury, Darling, Elgin, Robertson, and Wellington regions, KWV’s ability as a commercial producer to source the finest quality grapes for a premium expression of the Cape Winelands is unrivalled.

The winemaking team takes care when selecting grapes to ensure they meet KWV’s exacting quality standards. They handle the grapes expertly before and during transport to KWV’s cellar facilities in Paarl. This site covers nearly 32 hectares, at the heart of which stands KWV’s imposing Cathedral Cellar, built in 1930.

A triptych is generally regarded as a set of three items intended to be appreciated together to understand the whole. KWV Cathedral Cellar Triptych hinges on the same philosophy: vineyard, winemaker, and cellar. Those three things work in unison to create a red blend which is a seamless harmony.

Triptych is a blend of Cabernet Sauvignon, Shiraz, Tempranillo, Petit Verdot, Petit Sirah, Cabernet Franc, Merlot, and Malbec. This layered and sophisticated red blend exudes aromas of plum, cherries, white pepper, red fruit, to***co leaf, and cedary oak. The palate reveals velvety tannin textures with a well-rounded, persistent finish. Red berries, cassis and Turkish Delight, with subtle hints of dark chocolate and dried spices are all present. The wine is juicy with a firm tannin structure. It is perfectly balanced with a neatly tapered lingering finish. The wine was racked to barrel where it underwent malolactic fermentation. It was then racked from the lees and returned to barrel for further maturation in French oak for 18 months. Enjoy this wine on its own, or as an accompaniment to meat casseroles, game dishes, and any other flavoursome red meat.

Cathedral Cellar, Triptych, Western Cape, South Africa, 2017 $10.99

Having established a vineyard in the early 1970’s in Bolognano, located in the heart of Abruzzo at the base of Gran Sasso, Marcello Zaccagnini’s philosophy has always been tied to the land. His slogan, “Wine, art of man”, comes from his work with the world renowned naturalist artist and early proponent of sustainability, Josef Beuys. The tralcetto (stick) is an actual grapevine cutting from the vineyards that is tied by hand onto each bottle, representing the connection between the wine and the land. Zaccagnini’s mission is to invest in, and promote the culture of the people, environment, and wine-making processes that represent the values of Abruzzo, as well as making the winery a cultural hub for artists, musicians, scholars, and wine enthusiasts. Marcello has accumulated a world class art and sculpture collection that is on public display in the winery, as well as in the vineyards, and supports many art festivals throughout the year.

Zaccagnini's Pinot Grigio has a tropical fruit bouquet, and extremely pleasant aromas are on the nose, leading to a fresh, well-balanced wine. It possesses great minerality, a generous mouthfeel, and a crisp, refreshing finish. The wine is made from grapes from a single vineyard. The vines are farmed sustainably, and hand harvested. Fermentation occurs with gentle grape pressing, cold skin contact, vacuum pressing, and a low temperature maceration. The entire fermentation process is carefully managed so the wine can preserve all of its delicate and complex aromas. It rests on the lees for 3-4 months, and then further aged in stainless tanks before bottling.

Cantina Zaccagnini, Pinot Grigio, Colline Pescaresi, Italy, 2022, $19.99

On National Absinthe Day, observed each year on March 5, we celebrate the drink known as “the green fairy.” Absinthe originated in Switzerland in the 18th century and rose to popularity in early 20th century France, especially with artists and writers including Ernest Hemingway, James Joyce, Pablo Picasso, Vincent van Gogh, and Oscar Wilde. The drink enjoys a mystique, and is often associated with bohemian culture. Absinthe was long banned in the United States, and much of Europe because of its reputation as an addictive hallucinogen. The drink is made of wormwood, anise, and fennel. It also contains trace amounts of the chemical compound thujone, which some people said caused psychoactive symptoms. It has been proven to be no more dangerous than ordinary alcohol, and has since been legalized, but its reputation lingers, making it seem forbidden, and fun. Cheers!

Do you crave festive cocktails? Do you need to be warmed up? Then you’ll want to celebrate National Hot Toddy Day today, January 11th. The warm drink is created in a kettle with various kinds of alcohol (usually rum, brandy, or whiskey), along with honey, lemon, water, and a cinnamon stick. It’s best enjoyed by the fire — preferably with snow falling outside. Unlike your typical mulled wine, wassail, or warm cider, hot toddies are light and hydrating, rather than overwhelmingly sweet. Some use this toasty drink to relieve cold and flu symptoms. Well or ill, try one! The classic recipe is ¾ cup hot water, 1 ½ ounces whiskey, 2 to 3 teaspoons honey, to taste, and 2 to 3 teaspoons lemon juice, also to taste, 1 lemon round, and 1 cinnamon stick as a garnish. Cheers!

Babylonstoren is one of the oldest working Cape Dutch farms in South Africa. The original farm house dates back to the 17th century in fact. Located at the foot of Simonsberg in the Franschhoek wine valley, this estate is surrounded by sprawling gardens known for their diverse and expansive specimens. In recent years Babylonstoren has become a renowned establishment in the vibrant Boland region. The farm’s standard range of wines is created using state-of-the-art methods including modern stainless steel tanks as well as oak barrels to produce award-winning wines. The range comprises four whites, four reds, a Provençal-style rosé, and a darling Cap Classique called Sprankel.

Sprankel is straw yellow in colour. This medium bodied and dry sparkling wine exhibits flavours of orchard fruits like green apples, tropical fruits such as lemons, and also nuts, especially almonds, and a very present biscuit. The Chardonnay grapes for their Methode Cap Sprankel are harvested from the estate's top sites, whole bunch pressed, and then fermented in tank. The wine remains on its lees through its second fermentation, and continues to do so for four years before disgorgement. Choose a bottle of 2017 Sprankel for $42.99 to ring in the new year!

Theater Square Wine & Spirits will be open from 1-8 PM New Year's Eve, and closed January 1st.

MadTree was created in 2013. It started as friends brewing beer together in a garage who took the leap to open a craft brewery in Cincinnati. Considering themselves “mad scientists” as well as being inspired by trees representing life and growth, the two words were forged together creating MadTree.

The conditions have to be just right for the formation of Thundersnow. This Spiced Scottish Ale has flavours of ginger, nutmeg, and vanilla, with hints of cinnamon, and a bready malt sweetness. It is made from Perle, and Northern Brewer hops/2-Row, Caramel 90L, Extra Special, Victory, Melanoidin, Chocolate Rye, Chocolate Malt, and Rice Hulls hops. The ABV is 8.5%. When you find this rare occurrence, savor it as long as you can. A real bargain at only $14.99 for a six pack.

In 1919, the requisite number of state legislatures ratified the Eighteenth Amendment to the United States Constitution, enabling national prohibition one year later. Crafted to commemorate the repeal of Prohibition on December 5, 1933, Remus Repeal Reserve is a limited release crafted from a medley of 5 bourbons. This 100 Proof Bourbon has aromas of sweet toffee, raisin, caramelized pecans, and fig. Tastes of smooth buttery notes, candied raisins, honey, cinnamon, and barrel char. Remus never shied away from an excuse to celebrate. And there are plenty of reasons to choose. Celebrate a man who had the creativity and commitment to become a legendary bootlegger. Celebrate a bootlegger who risked family, fortune, and freedom to craft the era’s finest bourbon. Celebrate a bourbon that defied an amendment. Celebrate an amendment that defied one that came before it. So celebrate this festive day with a bottle of Remus Repeal Reserve for $109.99, while supplies last.

2023 marks 10 years since Picpoul de Pinet gained its AOC status, although the Piquepoul variety has been grown in southern France's Languedoc-Roussillon since the 14th century. Picpoul de Pinet is a crisp, refreshing white wine made exclusively from the ancient Piquepoul grape. It is the only Languedoc appellation dedicated solely to dry white wine production, and in a region dominated by blends, this is one of very few areas that permits the use of one single grape variety. Originally Piquepoul was better recognised as one of the grapes used to make vermouth in this area. However the variety has found its niche in dry, refreshing whites, and now more than 11 million bottles are produced each year.

The Picpoul de Pinet vineyard area is sun-drenched hillsides called "costières" (coastal region) in the garrigue, near the Etang de Thau - a coastal lagoon on the edge of the Mediterranean sea situated between the ports of Sète and Marseillan. The garrigue is the name given to open scrubland made up of low-growing, dwarf bushy shrubs including holm oak, juniper, broom, and wild herbs such as rosemary, thyme, and sage. The maritime influence, both cultural, and climatic, is strong here.

The name Piquepoul means ‘lip stinger’, on account of its zingy acidity. This is complemented by citrus, and stone fruit, and a distinct saline, iodine quality. More complex examples can also display mineral, wet stone notes, or round, leesy richness. The wines are often pale lemon-yellow in colour with green tints, although some styles can be more golden.

Oysters, and mussels are harvested from within the Etang de Thau itself, so these are naturally classic pairings with Picpoul de Pinet wines. The saltiness of seafood platters, and salt cod croquettes pair excellently with the grape’s signature racy acidity. Its lip-puckering freshness can also cut through richer foods like cheese and charcuterie, or even lemon-based desserts, making it a versatile wine for picnics. Picpoul de Pinet is also versatile with plant-based dishes, such as a salad of salicornia (sea asparagus). As with oysters, this type of sea vegetable also grows around the edges of the Etang de Thau, and imparts the same salty, iodised tang that matches so well with the wine.

The success of Picpoul de Pinet lies largely in its consistency, offering reliably fresh, food-friendly wines. The fluted green bottle, called Neptune, with its Languedoc cross and wave pattern emblazoned across the top, is instantly recognisable. In general the wines are consumed when young, however there is now a movement around a more complex, richer, age-worthy style.

Our favourite Picpoul de Pinet is by Hugues Beaulieu, and is called Les Costières de Pomeols. It is a real bargain at only $13.99 a bottle. So get some oysters from your fishmonger and try a bottle today.

Holiday weekend! Time for some mimosas. Try making a batch with Cava instead of Champagne. Campo Viejo Cava Brut Reserva is a bargain at only $18.99.
