When we re-opened as Little Egg last year we kept a lot of classics from Egg's menu in Williamsburg. The Little Egg Katsu was one of the new dishes, and we suspected that it would be a hit...who wouldn't love an egg sandwich that was crispy, custardy, bright, a little spicy, and unlike other egg sandwich out there?
Really proud to see our little egg katsu emerge as a new classic, and so grateful to for including us in such good company in this piece for . NYC is one of the great sandwich cities, especially breakfast sandwiches, and it's special to be among the notables for such a central part of our city's food identity and culture.
(If you're ever in Tokyo ask us for the kushikatsu stand that inspired the sandwich in the first place! See y'all for breakfast soon!)
Very glad to be taking part in this weekend's -organized bake sale raising funds for 's industry-supporting mental health services. Each of the participants will be selling some special spring treats at their locations, so make a day of it and take a tasty loop around BK!

Love being in such good company supporting such a great cause - be sure to stop by & this weekend and beyond!
Today and tomorrow at Little Egg .this.make.me.happy & of layered up this lovely first of the season local rhubarb tart with crisp pastry, strawberry rhubarb jam, lemon thyme, and creme fraiche whip. How lucky are you?!
One year ago today we opened Little Egg on Washington Ave! It's been a wild, sometimes difficult, sometimes absurd, often amazing first year, and we're gonna fry up some chicken this afternoon to celebrate. Stop by! We've got lots of stories to share (ask us what happened to the syrup!)
Another thing we have to share is enormous thanks to everyone who has made little egg possible, from our opening crew to today's team, with special shout outs to .this.make.me.happy .jg and so many more. We wouldn't be here without them, and everyone who's left their mark on our little space along the way.
Thanks for showing us so much love from Day 1, excited for lots more in the year ahead!

It's the third day of Spring (even though it feels like the heel of winter) and over here at Little Egg it's our first day of switching to accepting tips!
When we opened up almost a year ago on Washington Avenue our main priority was to make a restaurant that did its best to live by our values - sustainable and local sourcing, being a caring and responsible part of our local community, sharing our resources, and being a great place to work and eat on all levels from the personal to the ethical to the financial.
Of the choices we made when we took root in our new home, trying out a gratuity-free model was a big one. Despite seeing many gratuity-free restaurants switch back to tips in response to staff preference and financial difficulties (aside from the few who have maintained, like π) we had to try it, even as a casual breakfast spot, in an effort towards pay equity among our team. Maybe we were, as they say, built different?
It turns out, well, maybe not. Restaurants are still hard to run! People still don't make enough money! And we don't want to stick with a principle that has potential ethical benefits but isn't the best option for the people we're working with at this very moment. So we decided as a team to shift back to the old reliable, giving our servers a chance to make a bit more and customers a way to share their love for our team.
That said, we think there's a better way, one that's available to restaurants in every state except New York and Massachusetts. The One Fair Wage model allows restaurants that don't take a tip credit (aka pay all their employees at least the full minimum wage) to share tips with cooks and servers alike. has been advocating for this for a long time and we're planning to push for that option to become a reality in NY as well.
If you're interested in learning more about our thinking and signing on to a petition towards our One Fair Wage goals, you can find the link in our bio. We're so grateful for all the love y'all have shown us in our first year and are excited to grow into our second! Thanks for the generosity and support, we'll see you for breakfast soon.

There are a LOT of great pastries in NYC, so to have the Little Egg cruller named the city's best by & is an amazing honor, to say the least. And even though we know "Best" is a questionable concept, we definitely think we have the best in Tanya aka .this.make.me.happy, who has been a part of Little Egg from well before the beginning and makes magic with the whole pastry menu, including bringing this perfect crisp-custardy cruller to life! Not to mention rebirthing it every couple months with yet another brilliant and unique glaze and drizzle combo that's always somehow better than the last.
Tanya spent months tweaking this cruller starting way before Little Egg opened (see the early spread of test pastries from nearly a year ago at the end of these photos!) Especially cool to us is the way she worked local AP flour from grains into a delicate batter when most would insist on reaching for the whitest flour around, and still gets that gorgeous rise! We've known from Day 1 that this is our favorite cruller in the city, and it's nice to see we're not alone!
Gonna start testing a new flavor this weekend to celebrate. Congrats Tanya, we love you and your pastries too!
Much like the moon, the true beauty of a bowl of biscuits and gravy resists the best efforts of a camera's lens. Maybe it's their shared qualities: the way they reflect the sun's light back at us in a way that makes it seem their own, their craggy surfaces. Anyway, we know that they both have a pull on us, spiritually and physically, shifting the tides of our day (both, interestingly, often towards a little sleep.)
Which is to say: we've got biscuits and gravy as a special at Little Egg this weekend! Choose either our pork sausage gravy or a vegetarian mushroom version, aglow with black pepper and silk chili, coating a buttery split biscuit. A sunny egg on top, orb gracing orb like a brilliant breakfast eclipse, wouldn't hurt it either. Go ahead: look right at it, take it all in.
