Two weeks in and we feel more like who we were meant to be than ever. The dining is beautiful. We get to be with all of our guests, experiencing our service and cuisine in different ways. We are so excited to be welcoming guests to our new dining room! Last week was the first week of offering a la carte next to our tasting menu and we are so so stoked! It feels the best it ever has! The end of a year prompts us to look back on past seasons, and dishes their ingredients inspired. From last winter:
1. Snacks celebrating a beautiful array of seafoods
2. Spot prawns, Dungeness crab, and an æbelskiver over a hot coal
3. What appear to be cinnamon rolls at first glance turn out to be surprisingly savory chanterelle rolls
4. Farro porridge, an ideal cold weather dish

Welcome to our fondue party! For Chef Seth who grew up eating queso in Texas, this course on the current menu is loaded with delicious, cheesy nostalgia. The base of Fontina and Harbison is kept warm over smoking pine, and accompanied by a trio of dip-able bites: smoked barbecue kohlrabi, pickled apple wrapped in toasted cabbage, and maitake mushroom glazed what we lovingly call “tasty paste.”

Fond farewell to our former caviar supplement! Chef Matt’s inspiration was the gorgeous bluefin tuna, available right off the coast of SF for the first time in years. Tuna belly is dressed in pickled ramps and hearth-dried figs, filling a toasted fig leaf tartlet topped with golden osetra caviar from . Sad to see this one go, but the upcoming set is based on a dish we did and we are stoked to share it with you!

It’s safe to say that during our last menu Seth was in his pie era. Both the bread course and dessert were nods to some of his favorite pies.
The dessert pictured is reminiscent of pecan pie, which Matt brought a summery lightness to with Kashiwase white nectaries. It was the perfect combination of a rich, decadent pecan pie and celebration Bay Area farm produce.

Cooking with only live fire presents a certain set of challenges. It requires a deeper sense of focus, and constant attention. Every day is a bit different than the last, but the theme remains the same; try to control the unruly beast that is fire.
Baking in the wood fire oven takes even more focus and care. Constant attention with little room to let your guard down yields the best results in the oven. The simplest tasks require a watchful eye and frequent rotation in an environment where the majority of the heat produced comes from one direction.
At Osito we welcome the challenge. We love the sense of connection to our craft through the lense of live fire.
