Our Day 29 feature is the legend Manny Pacquiao! 🥊🇵🇭🇺🇸✨

From the gritty streets to the pinnacle of global boxing, Manny Pacquiao's life story is a testament to the indomitable Filipino spirit. He is a champion both in and out of the ring. 🥇

Manny Pacquiao, known as "PacMan," is a legendary boxer with a record-setting eight-division world champion and twelve major titles. He was the first to win the lineal championship in five weight classes and has claimed major titles in four "glamour divisions." His career spans four decades, and at 40, he became the oldest welterweight champion. His fights generated $1.2 billion in revenue, and he was the world's second-highest-paid athlete in 2015. Pacquiao also pursued a political career, serving as a Senator in the Philippines from 2016 to 2022 and running for the country's highest office.

Manny's journey reminds us that greatness is not confined to one's origins, but is shaped by unwavering determination and resilience. He knows firsthand the struggles of humble beginnings, having once survived on just one meal a day, even sleeping on the streets. But it's these hardships that fueled the fire within him, propelling him to achieve what many thought was impossible. 💪🔥

In his own words, "I will never forget that, and it inspires me to fight hard, stay strong, and remember all the people of my country, trying to achieve better for themselves."

As we celebrate Filipino American History Month, let us take pride in our heritage and honor the legacy of Manny Pacquiao. His battles in the ring are legendary, his victories etched in history, but it's his heart, his dedication, and his unwavering love for his country that truly set him apart. Our Day 28 feature is Tim Flores and Genie Kwon, the chefs behind Kasama, a beacon of Filipino culinary excellence, in Chicago!

Their journey has been nothing short of remarkable, and earning the coveted Michelin star rating speaks volumes about their culinary prowess. The Michelin guide hailed them for taking traditional Filipino cuisine and giving it a creative, contemporary twist. Their menu boasts inventive dishes like "maitake mushroom adobo sauced with mussel emulsion," "pancit" featuring squid ink noodles, scallop conserva, and shaved Serrano ham, and Chef Kwon's elegant take on "halo-halo" with Asian pear granita and pandan ice cream.

Tim's connection to Filipino cuisine runs deep, with his parents once residing in the very neighborhood where Kasama now stands. His love for Filipino food is evident as he combines his American upbringing with his passion for preserving the authentic flavors of his heritage.

He beautifully articulates the sentiment that Filipino food is a tapestry of cherished memories, always evolving and rooted in the traditions of our mothers and grandmothers. For the chefs at Kasama, the challenge was to honor these roots while making Filipino cuisine more accessible to a broader audience.

“We wanted to do Filipino food, and Genie wanted to do French pastries. And so Kasama, meaning 'together' in Tagalog, made sense for us. It was just fitting, and it made so much sense to use the word.”’

We congratulate Tim Flores, Genie Kwon, and the entire Kasama team for their culinary brilliance and their invaluable contributions to Filipino American cuisine. Your journey inspires us, and your delicious creations continue to tell the story of Filipino culture. 🇵🇭🍽️🌟

Happy Filipino American History Month!

Our Day 22 highlight is Santo Malo! 🇵🇭🇺🇸

Saint Malo was first established as a fishing village along the shores of Lake Borgne in Louisiana in the 18th century and continued to flourish until the 20th century. The settlement’s namesake, Juan San Maló, was a leader of a group of Maroons (runaway enslaved people) who took refuge in the marshlands. The Asian pioneers of Santo Malo were the Filipino sailors and indentured servants who escaped the Spanish Galleons in the 1700s later known as Manilamen after the capital city of the Philippines.

During the Manila Galleon Trade era, Filipino sailors and indentured servants played a crucial role in connecting Asia, the Americas, and Europe. Despite uncertainties, they contributed to U.S. history, fighting in the Battle of New Orleans in 1815 and helped secure an American victory in the War of 1812.

Writer Lafcadio Hearn shed light on Saint Malo's unique fishing village in the 19th century, and the Manilamen introduced innovative sh*****ng techniques, preserving shellfish in a tradition reminiscent of the Philippines. Also, their houses were built on stilts raising the from the marshland similar to the Nipa huts of the Philippines influencing future marshland construction in surrounding areas.

Their intermarriages with neighboring ethnic groups, architectural language, and lifestyle helped shape Louisiana's multicultural society. Despite facing destruction due to numerous hurricanes, their legacy endures and is commemorated by historical markers at the Los Isleños Museum Complex in Saint Bernard, Louisiana.

We encourage you to share this graphic on your social media as we celebrate the resilient Manilamen and their cultural contributions this Filipino American History Month!
