Flavoured with warm spices, sugar and fermented bean chilli paste, Taiwanese beef noodle soup is one of the most iconic street food dishes in Taiwan.
The beef noodle soup is like your family's chicken noodle soup recipe. There are many variations of how to make it, but this is the one that I grew up with.
As for the noodles, as long it is wheat noodles, I like to experiment with different varieties, from knife cut, hand pulled, narrow to broad.
