Here's a very easy high-protein recipe for you: One-Pan Mamma Meatballs 😋
Ingredients:
500g beef mince
1 red onion, diced (use half in meatballs, half in pan)
3 cloves garlic, minced (1 clove in pan, 2 cloves in meatballs)
1 egg
1 cup gluten-free breadcrumbs
1 tbsp mixed herbs (parsley, oregano, and rosemary)
1/4 cup basmati rice
1 tbsp Olive Oil
1 cup chicken stock
Salt and pepper, to taste
1 can (approx. 400g) diced tomatoes
1 cup grated cheese (cheddar or mozzarella)
1 tbsp olive oil (for cooking meatballs)
Instructions:
Prepare the Meatballs:
In a large bowl, combine the beef mince, half of the diced red onion, 2 cloves of minced garlic, egg, gluten-free breadcrumbs, mixed herbs, basmati rice, and season with salt and pepper.
Mix everything together thoroughly until well combined.
Roll the mixture into meatballs, about 1 to 1.5 inches
Cooking:
Heat a large, deep frying pan or skillet over medium heat.
Add 1 tbsp of olive oil
Add the remaining half of the diced red onion and 1 clove of minced garlic to the pan. Sauté for 1-2 minutes
Adding Ingredients:
Carefully add the meatballs into the pan, arranging them evenly around the pan.
Pour in the chicken stock and diced tomatoes.
Simmering:
Bring the mixture to a gentle simmer. Cover the pan with a lid, reduce the heat to low, and let it cook for about 20-25 minutes, or until the meatballs are cooked through and the rice is tender. Stir occasionally to ensure even cooking.
Finishing Touch:
Once the meatballs and rice are cooked through, sprinkle the grated cheese evenly over the top.
Cover the pan again and let it sit for a couple of minutes until the cheese melts.
Serving:
Serve the One-Pan Mamma's Meatballs hot, garnished with additional chopped fresh herbs if desired.
