🤩 Recipe of the Week 🤩

Veggie quesadilla

Easy, beany and oh-so-cheesy...

Deduct 3 Syns if using the Cheddar as half a Healthy Extra ‘a’ choice.

Our trio of summer salsas is the perfect dip for this dish — pick your favourite, or try all three

🤩Ingredients 🤩

⭐️Low-calorie cooking spray
⭐️½ medium red onion, finely diced
⭐️1 medium red pepper, deseeded and diced
⭐️1 garlic clove, crushed
⭐️½ tsp cumin
⭐️½ tsp chilli powder
⭐️½ x 400g can black beans, drained and rinsed
⭐️½ x 200g can sweetcorn, drained
⭐️2 tortilla wraps (around 65g each)
⭐️90g Cheddar, grated
⭐️Slimming World salsa, fat-free natural yogurt and mixed salad, to serve

🤩Method🤩

⭐️Spray a large non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add the onion, pepper and garlic and cook for a few minutes until softened. Add the spices and cook for a further minute.

⭐️Remove from the heat, add the beans and sweetcorn and stir everything together.

⭐️Spray another large non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add a tortilla to the pan, and spoon half the bean mixture then half the cheese along one side of the wrap. Fold it over and cook for a few minutes, then flip and cook for a couple of minutes more.

⭐️Remove from the pan and repeat to make a second quesadilla. Slice each quesadilla into 3 triangles, divide between plates and serve with the salsa, fat-free natural yogurt and salad.

🤩Recipe of the Week 🤩

We have been talking lots about pizza in group the last few weeks so thought I’d pick a pizza inspired recipe 🍕

🤩Pizza-topped chicken 🤩

Enjoy the pizza experience while keeping the Syns as low as possible. And if you want to swap the toppings for other favourites like mushrooms or spinach, go right ahead!

🤩Ingredients 🤩

⭐️1 red onion, finely chopped
⭐️1 large red pepper, deseeded and roughly chopped
⭐️2 garlic cloves, crushed
⭐️120ml hot vegetable stock or water
⭐️4 skinless and boneless chicken breasts
⭐️Low-calorie cooking spray
⭐️400g can chopped tomatoes
⭐️2 tbsp tomato purée
⭐️2 tsp dried oregano
⭐️125g reduced-fat mozzarella, drained and diced
⭐️½ tsp dried chilli flakes (optional)
⭐️Fresh basil leaves, to serve

🤩Method 🤩

⭐️Preheat your oven to 220°C/fan 200°C/gas 7.
⭐️Place a non-stick saucepan over a medium-low heat and add the onion, pepper, garlic and 2 tbsp stock or water. Cover and cook for 10 minutes or until soft.
⭐️Meanwhile, slice into the side of each chicken breast, taking care not to cut the whole way through, and open them up like butterflies. Spray a non-stick frying pan with low-calorie cooking spray and put it over a high heat. Fry the chicken breasts for 1-2 minutes on each side or until they start to colour, then put them in a roasting tin and roast for 15-20 minutes or until cooked through.
⭐️Add the chopped tomatoes, tomato purée, oregano and remaining stock or water to the onion and pepper pan and simmer, uncovered, for 15 minutes, stirring occasionally. Season to taste.
⭐️Spoon the tomato mixture over the chicken breasts, evenly scatter over the mozzarella and sprinkle with the chilli, if using. Return to the oven for 5 minutes or until the mozzarella has melted.
⭐️Scatter over the basil leaves and serve hot with your favourite vegetables – or all Speed veg if you want to make it an Extra Easy SP meal.

🤩Recipe of the Week 🤩

Creamy prawn 🍤 and asparagus spaghetti

🤩Ingredients 🤩

⭐️400g dried spaghetti
⭐️Low-calorie cooking spray
⭐️450g raw peeled tiger prawns
⭐️1 garlic clove, crushed
⭐️2 courgettes, grated
⭐️250g asparagus tips, halved
⭐️250g plain quark
⭐️½ tsp mustard powder
⭐️1 vegetable stock cube dissolved in 2 tbsp hot water
⭐️2 tbsp chopped fresh dill
⭐️Zest of 1 unwaxed lemon

🤩Method🤩

⭐️Cook the spaghetti according to the pack instructions, then drain well.
⭐️At the same time, spray a large non-stick frying pan with low-calorie cooking spray and put it over a high heat. Tip in the prawns and cook for 2 minutes, stirring occasionally. Add the garlic, courgettes and asparagus and cook for 5 minutes, stirring continuously, until the prawns are pink and the vegetables are tender.
⭐️Take the pan off the heat and stir in the quark, mustard powder and stock.
⭐️Combine the prawn mixture with the spaghetti and chopped dill, making sure the pasta is well coated.
⭐️Season to taste and divide between shallow bowls. Sprinkle over the lemon zest and serve with a crunchy, Speed-packed salad.

🤩 𝐑𝐞𝐜𝐢𝐩𝐞 𝐨𝐟 𝐭𝐡𝐞 𝐖𝐞𝐞𝐤 🤩

July is national icecream month! Have you ever tried making your own? This recipe sounds delicious 😋

🍋Lemon meringue ice cream🍋

Keep a tub of this in the freezer for a scrumptious standby dessert

🍦🍋Ingredients 🍋🍦

⭐️8 level tbsp sweetener granules
⭐️400g low-fat custard from a can/carton
⭐️350g no-added-sugar, fat-free vanilla yogurt
⭐️1 tsp lemon extract
⭐️2-3 drops of yellow food colouring
⭐️2 medium egg whites*
⭐️2 ready-made meringue nests (about 13g each), broken into small pieces
*Pregnant women, the elderly, babies and toddlers are advised to eat eggs showing the British Lion stamp if eating raw or partially cooked eggs.

🤩Method🤩

⭐️Put the sweetener, custard, yogurt, lemon extract and food colouring in a bowl and mix well. Put the egg whites in a separate bowl and lightly beat until frothy.
⭐️Add the egg whites to the custard mixture and stir well. Transfer the mixture to a shallow, freezer-proof container, cover and freeze for 2-3 hours.
⭐️Remove from the freezer, put the mixture in your food processor and blitz until smooth. Stir in the meringue, then return the ice cream to the container, cover and freeze for 1-2 hours, or until it's starting to set around the edges.
⭐️Remove the ice cream from the freezer and use a fork to break up the ice crystals. Freeze for a further 3-4 hours, beating the mixture with a fork every 30-40 minutes, until it's firm enough to scoop.
⭐️Remove the ice cream from the freezer 10-12 minutes before serving, then divide it between 8 dessert glasses or bowls.

What’s your favourite way to have tomato’s? They are super versatile....this week recipe of the week is..

🍅🍅🍅Home-made tomato ragu🍅🍅🍅

High in flavour and low on effort, you can enjoy this sauce on its own with pasta or use it as a base for so many other dishes

🤩🤩🤩🤩Ingredients 🤩🤩🤩🤩

🍅Low-calorie cooking spray
🥫2 large onions, finely chopped
🍅3 garlic cloves, crushed
🥫1 tsp dried oregano
🍅A small handful of chopped basil leaves, finely chopped
🥫400g can chopped tomatoes
🍅250g passata
🥫2 level tbsp tomato pureé
🍅1 level tsp sweetener granules

🤩🤩🤩🤩Method 🤩🤩🤩🤩

🥫Place a medium heavy-based pan sprayed with low-calorie cooking spray over a low heat. Add the onions and garlic and cook for 12-15 minutes, or until softened.
🍅Increase the heat to medium-high, then stir in the dried oregano, basil, tomatoes, passata, tomato pureé and sweetener. Simmer gently for 25-30 minutes, or until you have a thick sauce, then season to taste with salt and freshly ground black pepper and stir.

‘Marry me’ chicken pasta

It’s the chicken dish that’s taken social media by storm – and now it’s Food Optimised! Prepare to fall in love at first bite…

🤩Ingredients 🤩

⭐️Low-calorie cooking spray
⭐️2 skinless and boneless chicken breasts, cut into strips
⭐️2 garlic cloves, crushed
⭐️50g sundried tomatoes, finely chopped
⭐️1 tsp paprika
⭐️1 tsp dried oregano
⭐️150ml hot chicken stock
⭐️Zest and juice of ½ unwaxed lemon
⭐️150g dried tagliatelle
⭐️200g plain quark
⭐️Large handful spinach
⭐️Handful fresh basil leaves, to serve

🤩Method 🤩

⭐️Spray a non-stick frying pan with low-calorie cooking spray and put it over a medium heat. Add the chicken and cook for 5 minutes, or until browned. Add the garlic, sundried tomatoes, paprika and oregano and cook for a further minute or so, before adding the stock and lemon zest and juice. Simmer for 5 minutes.

⭐️Meanwhile, cook the tagliatelle according to the pack instructions.

⭐️Stir the quark and spinach into the sauce and mix well. Season lightly and cook for a minute or so to wilt the spinach.

⭐️Add the pasta to the pan and stir it through the sauce until fully coated. Divide between 2 bowls and top with the basil leaves. Serve with your favourite Speed veg or salad.
