This Rum & Coffee Hot Chocolate is made our limited edition Coffee & Cherry Syrup. It combines the deep, comforting notes of coffee and chocolate with the smooth, caramel undertones of rum, creating a truly irresistible winter beverage. Sip, savour, and let it melt away the cold. 🍫

Ingredients (serves 2) 🥛

200ml milk (or oat milk)
50g drinking chocolate (We used Wellington Chocolate Factory)
60ml rum
60ml Coffee & Cherry Syrup

Method 👩‍🍳

~ Gently heat the milk in a pan then stir in the drinking chocolate until it's completely dissolved

~ Add the rum and Coffee & Cherry syrup and stir

~ Pour into small glasses or cups and garnish with shaved dark chocolate or cinnamon

Spotlight on Six Barrel Soda: Interview Our interview with innovative, award winning and a firm Wellington favourite, Six Barrel Soda.

Our friend Bri DiMattina is an amazing chef and cookbook author, and she kindly created this delicious recipe for Coffee & Cherry Custard Pots...

Ingredients (serves 2) 🥚

500ml Milk
250ml Cream
2 egg yolks
3 tbsp Cornflour
Pinch of salt
3 tbsp Coffee & Cherry Syrup

Method 👩‍🍳

~Put everything in a thick bottomed pot over a steady (not too hot) heat - you want every thing to heat steadily without boiling.
~Stir everything constantly until it thickens - continue for a minute or two over a lower heat and then pour into serving glasses (or ramekins)
~Add a little 'sip' of syrup to the top and then dust with cocoa - eat warm or chilled

Finish it off with some exceptional Tongan vanilla from Heilala and you’ve got a tasty and sustainable syrup that’s ready when you are. 👊

Feijoa season has got us seriously in the mood for this Feijoa Sour mocktail! 😘

Ingredients 🍋

50ml Seedlip Garden 108
20ml Lemon Juice
25ml Six Barrel Feijoa Syrup
25ml Egg Whites (or aquafaba if vegan)
Ice cubes

Method 🍸️

Add all ingredients into a shaker. Dry shake (without ice). Open the shaker – you should see a foamy head (if not, shake a bit more). Now add a good amount of ice. Shake once more, vigorously. Strain into a coupe glass. Garnish with rose petals or buds. 🌹
