Ise ebi (lobster) is one of Japan’s favoured delicacy during winter. With shells likened to armour and long antennas symbolising longevity, this is a celebratory dish for many different occasions. The best time to enjoy Ise ebi is when they are caught during their natural season from October to April as the cold waters around Japan helps to flavour and tenderise the meat more so than other lobster species. Ise ebi can be served steamed, grilled, boiled and even raw.

Musk melon from Shizuoka - The epitome of luxury in Japanese gift-giving culture 🍈
Perfectly spherical with an intricate, net-like pattern and inviting scent, the Japanese musk melon is fruit at its most opulent.
Seen as a vessel of appreciation, samurais used to offer melons to the sh**un, their leader, as a sign of loyalty and appreciation.
King of Grapes 🍇
Culturally significant to Japan, Kyoho translates to giant mountain grapes. Plump, juicy and intoxicating with its wine-like flavour, they are one of Japan’s prized grape variety.
Ikura
Fresh, fragrant and invigorating, wasabi has been used in Japanese tradition in the preparation of sushi for its medicinal herb function which acted as an antidote against food poisoning.
Other than its beneficial effects on health, did you know that wasabi has been used in the development of a fire alarm? When a fire is detected, signals are transmitted immediately to release the pungent smell of wasabi, which is powerful enough to wake people up, even from a deep sleep. The team of researchers led by Imai Makoto, lecturer in the Department of Psychiatry at Shiga University of Medical Science had even won the Ig Nobel prize in chemistry for their development of the wasabi fire alarm in 2011. Isn’t that fascinating?

We’ve served her many times and she always brings her friends over to have dinner. I feel acknowledged and appreciated when customers notice the details and effort we put into the restaurant.”

“If I could have a superpower, I’d wish for the ability to split into different illusions so I can better manage and serve customers while taking on different roles in the restaurant!”
Q3: What is the most enjoyable part of your day? 😊
“I get most excited when I finally get to welcome our customers at the door and also when I bid them goodbye as they leave the restaurant feeling blissful and satisfied.”

Abalone lives on reef where there is abundant seaweed, and it is harvested mainly by divers. In Chiba prefecture, abalone is plentiful in the Sotobo area, and it can be enjoyed as sashimi, steamed with sake, or even steak.
