For a limited time, we’re serving Japan’s top brand of tuna, Oma Maguro from Aomori Prefecture. Caught using the longline method (Haenawa 延縄) with carefully spaced baited hooks, this technique reduces damage to the fish and prevents “burning” (when tuna struggle, their body temperature can spike to 40°C, affecting flavour and tenderness).
“They taste so much better when paired together,” such are the comments we’ve heard from many of you who attended “Our Next Level of Sake and Wine Pairing” last Tuesday in collaboration with Lungarotti and Richfield Brands & Services—our biggest challenge yet. This is exactly what we hope to achieve through every pairing: Janice and the team believe that the right combination of sake, wine, and food is what really matters.
It started with a meeting last year with Mr Marco Rossi from Lungarotti Winery and Ee Loong of Richfield Brands, which ballooned into a new possibility and challenge. We’re grateful for all the support and encouragement and are delighted to feature our longtime partners Ichinokura Brewery and Moriki Sake Brewery (Rumiko no Sake) in the lineup.
In Janice’s words, this is only the beginning. We’ll keep working hard to bring you even more exciting events like this.

Our Master Sake Sommelier, Janice, has been on quite a journey with sake and continues to make her mark on the international stage. From last year’s Vinexpo Singapore and the Singapore Sake Challenge to this year’s Vinexpo Hong Kong, she was honoured to serve on the judging panel of the 2nd Japan Women‘s SAKE Award ~ Fine Sake Competition organised by Women’s Association for Japanese SAKE & WINE Lovers in Fukui early this month. This is the first sake competition in Japan judged exclusively by women.
We’re excited to move forward in this journey with you all and continue spreading the culture of sake far and wide together.

Our first pairing with not one but two sake breweries - Shindo and Shuho from Yamagata prefecture. Collaborating directly with breweries, in person especially, means many things to us. We aim to bring the experience of another texture to everyone and to see and connect further as part of the community. We’re excited to see what the future holds and what the team will create next.

A delicacy from Kochi Prefecture, Ishinomaki invites you to try our Chanbaragai (Chanbara Clams) this season. For our August Sake Pairing, we are thrilled to be collaborating with not one, but two long-standing revered Yamagata sake breweries and their Master Brewers. Representing Shindo Sake Brewery, known for its popular Gasanryu sake, is Masanobu Shindo-san, and from Shuho Sake Brewery, celebrated for the well-loved Shuho labels, we have Hidekazu Takeda-san. Join us and Chef-Founder Chi-san, Master Sake Sommellier Janice-san, and our two special speakers as we taste their creations matched with a 6-course summer menu made especially for this event!
Yamagata is one of the best and most lauded regions for sake making, with a treasure trove of soft waters and high-quality sake rice. Home to approximately 50 sake breweries, Yamagata became the first prefecture to attain a Geographical Indication (GI) in December 2016. The region is renowned for fruity, aromatic, light, and clean ginjo-shu.
