Rillette Bar is the wine bar of Le Bistrot Du Sommelier, located on the second floor of the shophouse. The Wine selection is carefully done by Max Fedkiw sommelier and co-owner. Travelling every year to France to look for the little gems that he can bring back to Singapore, his wine philosophy is to let people discover wines which are at the height of the famous labels but at an affordable price!

Pierre Girardin is a young and talented winemaker from Burgundy, continuing his family's winemaking legacy spanning 13 generations. He learned the craft from his father, Vincent Girardin, spending his formative years working in the vineyards and cellars.
Pierre embraces organic viticulture and is on the path towards full certification. He pays close attention to the lunar calendar and uses high-quality compost from the family farm. His goal is to highlight the mineral essence of Burgundy, steering away from overly concentrated wines.
At Domaine Pierre Girardin, Pierre's focus is on expressing the unique character of each vineyard. His style emphasizes elegance, purity, and balance. The inaugural releases from his estate in 2017 showcase his remarkable talent, revealing the subtle nuances of Pinot Noir and Chardonnay in a beautiful and authentic manner.

Le Bistrot du Sommelier Introducing:
Domaine du Mortier's Dionysos 2018

Is a red wine made in France from 100% Cabernet Franc grapes. It has a deep ruby color with aromas of black fruits, floral notes, and spices. On the palate, it is medium-bodied with a firm tannic structure and moderate acidity. The flavors of black fruits are complemented by savory notes and the wine has a long finish with a touch of minerality. It is well-balanced and can be paired with rich and hearty dishes.

Le Bistrot du Sommelier

Introducing:
Domaine Mosse, ‘Arena’ Savennières 2020

Agnès and René are strong proponents of minimal intervention winemaking. All their wines are barrel-fermented and aged, using only neutral oak, and minimal sulphur is used. Whilst René is now retired (Agnès still works), the couple's sons, Sylvestre and Joseph, have since taken the reins of the family estate.

Type: Lo-Fi, White Wine
Grape Variety: Chenin Blanc

Characteristics: This wine is made from a tiny plot of land that is less than half a hectare which is what makes it so special and oh so hard to come by. It's rich, textural, and balanced by pristine acidity, with delicate florals, stewed apple and wild honey notes lingering alongside the faintest hint of residual sugar. A truly charming example of Chenin.

Why: it is excellent to taste with our Steamed 'Morisseau' mussels in white wine saffron cream sauce, Pan Seared Atlantic Cod.

Closerie Saint Roc Bordeaux 2016

Something special! From an estate purchased by the Amoreau family of legendary Château du Puy (now just called Le Puy), which has become one of just a few cult wines in Bordeaux.

Situated close to the villages of Saint Emilion and Pomerol on clay soil, and fossil rich limestone. They bottle the wine under ‘Vin de France’ label as it allows them to best express their exceptional soil and terroir, the way they want to.

Region: Bordeaux 
Type: Red Wine
Grape Variety:Merlot, Cabernet Franc and Cabernet Sauvignon.
Intensity: silky

Characteristics: It pulses with dark fruit, lashings of cassis and blackberry, the rich aromas of sweet earth and autumnal berries are mesmerising. A wine of great elegance and purity, to complement a special meal.

Why: It goes well with our Le Morceau Du Chef “Oven Roasted Striploin”.

Domaine Saint Cyr Chénas Les Journets 2018

Les Journets is an extension of the Blémonts parcel in Chénas. 

A juicy Beaujolais thanks to the full cold carbonic fermentation, it is matured for 8 months in used barrels and 2 months in tank.

Characteristics: Florals Aromas, Cherries and chocolate, wild blackberries, spice, and a hint of liquorice, moreish tart acid on the palate, sandy tannins and lots of depth.

Region: Beaujolais, France

* Viticulture: Organic 

* Grape Variety: Gamay

* Why? It Goes well with our Salade de Harengs, pommes à l’huile.
