This post is dedicated to my Mom
Lost her awhile ago. As Mothers day is soon approaching thought of sharing one of her recipes.
When i was younger my mom would write down recipes for family members as she was a great cook.
So i took a page our of her book. Hope you enjoy this plant based recipe. Its heart healthy, kidney friendly , and diabetic diet friendly.
Ingredients
4 boiled medium potatoes cut into square cubes
2 onions finely chopped
5 garlic cloves
1 inch ginger
1 cup any plain yogurt
2-4 dry red chillies depending on spice level
1/2 cup grated coconut
2-3 cloves
1/2 inch cinnamon stick
2-3 cardamoms
1/8 tsp salt
2 tablespoons chopped cilantro leaves

Blend the following ingredients garlic, ginger, coconut, dry red chillies, cloves, cinnamon, cardamom and keep aside. Add yougrt to this mixture and mix well.
Take oil in a skillet add the blended mixture and let it simmer till the oil separates out. Add the boiled potatoes and cook for five minutes. Add salt and garnish with 🌿 cilantro.
One can have this with rice or chapathi

Here you go, a neat little recipe with eggplants💚
Hope you like it✅
Ingredients
Dry roast the following items
1/4 cup peanuts + + 2 tsps sesame seeds + 2 dry red chillies 1/4 cup dry coconut
Cool it and blend it to a fine paste with 3- 4 ounces of water
Take 5 - 6 medium sized eggplants, make a slit on 4 side, keeping its shape intact. Brush on some oil on each egg plant and place in air fryer for 5 - 7 minutes at 400 F for 7 - 10 minutes till soft.
In a pan add 1 tbslp oil, + add 2 red chillies + 1 tsp mustard seeds + 1 tsp cumin seeds
To this add 1 diced medium sized onions. Once golden brown add the following spices
1 tsp cumin powder + 1 tsp paprika powder + 1 tsp coriander powder + 1/2 tsp salt. Stir for a few minutes and then add 4 tbslp tamarind paste.
Finally add the blend of peanut paste to it, let it simmer for 4 -5 minutes. Add the eggplants and let it simmer for another 4 -5 minutes
Voila ready to serve. Serve it plain, or with rice or naan.

There are ways you can enjoy thanksgiving and not feel guilty 💚
CKD friendly Thanksgiving is a good way to keep you healthy and not feel deprived of all the food options out there✅
Choose appetizers that have some kind of fruit or vegetable tray in it✅
One can choose cream cheese and low sodium crackers to keep sodium intake low✅
Choose side dishes with vegetables such as carrots or green beans or zucchini✅
Desserts such as apple or cherry pie,peach cobbler and crumble cake all low potassium options✅
Do enjoy the turkey but keep the portions low as its animal based protein✅
Try and substitute something plant based such as beans, lentils and still enjoy the rest so one does not feel deprived✅

Have you ever wondered as to how much phosphorus one eats when eating foods loaded with phos additives✅

Here is a quick check, on amount of free phosphorus in one’s food✅

The top section mentions foods without additives🥰
The bottom section in red for each category shows you how much more free phosphorus is present when phos additives are added to foods 🛑

Food sources of protein which contain phosphate additives provided an average of >100 mg of additional phosphorus per 100 g of protein food source

Now if you have CKD and or are End Stage Renal Disease /dialysis. This can show you how many more binders one might have to take with one's meals to help get rid of phosphorus from diet.

This finding also suggests that even a high intake of phosphate binders is ineffective to control phosphatemia in the presence of an uncontrolled phosphorus intake in the form of additives. This could also explain, in part at least, the existence of patients who do not respond to phosphate binder therapy

The study showed cooked ham and roast breast turkey with phosphate additives had a phosphorus content 70% higher than samples containing no additives

Thus check your ingredients, and if it has phosphorus additives switch to brands that do not have phosphorus additives

I made a few changes to keep it low sodium

1/2 cup chickpeas - 112 mg phosphorus, 237 mg potassium , 135 mg Sodium, Proteins - 6 g, Fiber - 4g, Calories - 127

🌱🙌🎉 Crispy Ranch Chickpeas!!

🔖 Make sure to save this recipe to make later!!

✨Ingredients✨
1 can of chickpeas buy the organic low sodium kind
1 tbsp olive oil
2 tsp dill
2 tsp salt free onion powder
1/2 tsp salt free garlic powder
1/2 tsp salt skip this step to keep salt intake low

🤗Strain your chickpeas and shake excess liquid. Wash real good till all the brine is gone.

🔥 Pop into your air fryer for @400 degrees for 10-15 minutes until golden and crunchy. Be careful not to overcook or they will be dry! If using an oven bake @400 for 30 min tossing halfway.

😍Season with olive oil & spices, toss and enjoy!!!

Taste Alterations is a very common symptom of Chronic Kidney Disease CKD and ESRD patients

The CKD taste plate helps clinicians and at times patients and caregivers identify reasons for decreased po intake.
- There are 5 separate tastes : Sweet, sour, bitter, salty, umami (savory)

- Use the plate method by recognising the symptoms and trial one of the solutions to see if it helps

Plate method
- inner plate --------> check for taste

- outer plate ----------> management of symptoms

Salty taste - High concentration of salivary sodium - restrict sodium, and add sweet tastants like tomatoes, beetroot

Metallic taste - High concentration of Urea - Avoid metallic cutlery, sodium bicarbonate mouthwash, prior to meals mints, ginger, beer, fruit juices, and tea

Bitter taste- High urea levels - Avoid bitter tastants eg coffee, chocolate, beer. Sweet tastants carbohydrates in a diet cooked with honey, fruit juices, tomatoes, beetroot. In case of diabetics care should be exercised if patients are trying to stimulate with high sucrose or glucose carbohydrates.
Adding acidic foods and drinks like grains, lentils, kiwi fruit, blueberries, acidic drinks like lemon, carbonated drinks, acidic condiments, and vinegar

Loss of taste - High salivary sodium or at times zinc deficiency - Work with a MD for zinc supplementation which needs to be monitored when use is long term. Adding in acidic foods and beverages. Adding spices , chilli, vinegar, marinades

Loss of Sour taste - High bicarbonate levels -- Trial acidic foods,and beverages as mentioned above

Loss of umami taste - high salivary bicarbonate - Trial of acidic foods, drinks and condiments as mentioned above.

Just because you have a chronic condition, be it high blood pressure, or heart failure or kidney disease or diabetes. It does not mean you cannot enjoy certain foods or restaurants 💚💃🏻👏🏼

Is this you. At work, co workers getting ready to order from Panera

Not sure what to get, as you have been told by your doctor you have high blood pressure, or you need to stop eating out. As outside food is not good for you anymore

Not to worry, I just listed a few options that are healthy for you.

Here are my go-to low sodium friendly sandwiches from Panera. Why are they friendly? They are:
•more plant-based
•include more veggies
•lower in protein
•lower in sodium

💚Kidney friendly
💚Heart healthy
💚High blood pressure
💚Diabetes

As a dietitian, I know that cooking homemade food every day is not always realistic. And to be honest it’s not always the most enjoyable option either😒

Eating out or ordering takeout is sometimes the best option for your life style and that’s totally ok💃🏻

So let's talk about eating out.

It's MEXICAN, how many times have I had patients say they do not eat out BECAUSE THEY HAVE CKD!!

How about Mexican food, I asked!!!

You are not alone in feeling so restricted and overwhelmed with CKD! 💚

Yes, you can still eat your favorite foods, like Mexican, with CKD, but you can do it in a healthy way for your kidneys!

If its mexican food, then look for these option ❤🌮

1. Ask for unsalted chips - that way one can reduce the amount of sodium intake

2. Ask for Corn tortilla in place of a flour tortilla. Corn tortilla have no added phosphate additives in them 🌽

3. Load up on veggies, that way it's more plant based, more fiber and less animal proteins 🎉

4. Fajitas, tacos, and tostadas are examples of great options 🌮

This labor day you can go healthy too. Choose some of these options to make a healthy plate.🥗

Building a healthy plate is as easy as filling half your plate with fruits and vegetables 🍉 🍎 vegetables 🌽 🌶

Focus on fresh foods, most foods in original forms such as fruits, vegetables, fresh meats, poultry, dry beans are low in sodium. Include these often into your meals or snacks fresh 🍱

You can grill and try different salt free seasonings such as herbs, spices, garlic, black pepper, lemon juice
Make your own salt free seasonings 🌿

Ingredients
1 medium head cauliflower
1 one-inch ginger root cube
1 garlic clove
1 teaspoon curry powder
1/2 teaspoon chili powder
1/2 teaspoon cumin powder
2 tablespoons rice flour
1/2 green bell pepper sliced
1 teaspoon lemon juice
2 tbsp canola oil
Preparation
Separate cauliflower into florets. Finely shred ginger root and mince garlic clove.
Combine ginger root, garlic, spices and rice flour. Coat cauliflower uniformly. Air fry at 350 F for 15 minutes
Heat oil. Add sliced green pepper, saute for 2 minutes, and add the cauliflower , cook for 1 -2 minutes and garnish with green onions.
Drizzle with lemon juice and serve hot. 
Helpful hints
Adjust chili powder for more or less heat.

Did you know Serum Phosphorus has been directly associated with risk of mortality in dialysis patients

Phosphorus in food products exists in two forms: organic and inorganic
Organic phosphorus are the naturally occurring phosphorus and can be found in plant and animals

Organic phosphorus in plants are in the form of phytates which we as humans cannot digest
Thus decreasing its bioavailability from these foods

Organic phosphorus from both animal and plant foods has an intestinal absorption rate of only 40%-60%.
Patients on dialysis or with CKD - taking binders with these organic phosphorus foods will further decrease the absorption of phosphorus.

Alternatively, inorganic phosphorus, such as phosphates added to foods during processing, has an absorption rate of greater than 90%.
So it's important to educate our renal patients on phosphorus additives : they can be identified on the food product ingredient list and they have a very high absorption rate.

Just listed the most commonly used phos additives in today's foods.

For a quick , go look in your pantry for anything packaged, and see if these additives are present in your ingredients list.

It is so important to know how little things can make a huge difference

Our food supply contains an abundance of refined added sugar.

How to read food labels
- Look for "added sugars" on the nutrition facts label. Try and not buy anything with more than 2g added sugar💚
- Scan the ingredient list for hidden sources of sugar like syrup, nectar, honey, molasses, and anything ending in -ose💚
- If these ingredients appear at or near the top of the ingredient list, avoid it,
Ingredients are listed in the descending order by weight, so it means that the product is high in added sugars💚

How to reduce sugar
- Cook from scratch💚
- Choose whole foods or whole grain option or products with fiber and less processed💚
- Snack smart, use option of whole foods like vegetables and hummus, or guacamole, fruits and nuts💚
-Be picky - Save indulgences for special occasions, like holidays💚

It gives me immense satisfaction when my patients reach out to me with better labs, able to eat a lot more and improve their GFR scores

Phosphorus is an important mineral that your body uses for energy and overall health. What you eat and drink can affect the amount of phosphorus in your body. The key to selecting foods with phosphorus is having the right balance for your needs.

Natural and Added Phosphorus

Natural Phosphorus: Phosphorus occurs naturally in meats, dairy, grains, and vegetables. Your body absorbs about half of this natural phosphorus from foods and drinks.

Added Phosphorus: Phosphorus is also added to many foods and drinks as a preservative. Your body absorbs nearly all of the added phosphorus from foods and drinks.

I just wanted to discuss coffee and creamers and milk alternatives. The reason being is high blood phosphorus numbers have been linked to risk of mortality in dialysis patients.

An 8-ounce cup of black coffee contains 116 mg potassium. This is considered low in potassium, but if you drink several cups of coffee a day it can add up.

Choosing a creamer that contains no potassium or phosphorus additives helps. Especially if you like more than 1 cup of coffee a day. As multiple servings of coffee can eventually add up.

When possible, choose the additive-free creamer or milk alternatives with lower amount of potassium and phosphorus that are not enriched

You can still enjoy your coffee while following a kidney diet. Read the ingredients list to identify creamers that do not contain phosphorus and potassium additives.

Use 1/2 cup or less of dairy milk or try a milk alternative, including almond, soy and rice milk that are not enriched.

Over the years as I have seen more and more kidney failure patients, and I have always been asked I wish I had seen you earlier.
I think that’s the best compliment a patient can give you.
My heart goes out to them for not being aware or not knowing better 💚
Hence I decided to plunge in and try and reach as many patients as I can. I have collaborated with the major nephrologists team here in North Carolina and also working on creating a CKD program for those folks not in North Carolina ✅
So make the change and be an advocate for your kidneys. I understand it’s hard but there are renal dietitians like myself who want to fight the kidney disease with you 💚

How about a low sodium Chinese food option. One can make it with tofu and make it plant 🌱 based

Schezwan paneer recipe

1. Soak red chilies 4-8 (depending on spice tolerance) in hot water for 30 mins. I have deseeded the chilies as we do not like the seeds in the sauce. Put in a blender and make a thick paste with 1 tblsp water
2.Take 5-6 ounces of paneer or tofu. Dice it into cubes
3.Take 3 tbsp corn flour +3 tbsp all purpose flour+ 1/4 tsp pepper +1/8 th tsp salt. Add water to it to make a fine smooth paste. Dip the paneer or tofu cubes in it. Coat it well with the batter
4.Take oil in a pan -1-2 tbsp , once hot add the coated paneer and fry on each side till golden brown.
5.Take a skillet add a tbsp of oil. To it add 3/4 tbsp garlic paste +1/2tbsp ginger paste. Saute for few minutes. Then add diced onions 1/2 , to it add 1 celery stick diced and 2-3 spring onions chopped fine. Stir for a few minutes
Finally add finely chopped green bell peppers around 1/2 Medium size. Sauté for few minutes.
6Add the fried paneer to the above medley, add 1/4 tsp sugar and sauté for few minutes. Once done add spring onions for garnish.

Enjoy a low sodium Chinese entree, can be eaten with rice or 🍝 noodles

A recipe for low potassium and low sodium swap for tomato 🍅 sauces Roasted Red Pepper tomato Sauce
Ingredients
1/2 cup roasted red peppers
1 garlic clove
1/2 cup low-sodium tomato sauce
 2 tablespoons olive oil
1 teaspoon dried Italian seasonings
1/4 teaspoon red pepper chili flakes

Preparation
Drain red peppers and measure 1/2 cup, (approximately 2 whole peppers).
Place peppers and garlic in food processor or blender and process until smooth.
Add tomato sauce, olive oil and Italian seasonings.  Process until well blended.  Ready to use on pizza, pasta or as a replacement for tomato sauce in recipes.
May be refrigerated 2 to 3 days or frozen until ready to use.
Helpful hints
Red peppers are available bottled, canned or fresh. Compare roasted red peppers and select the brand lowest in sodium or make from fresh peppers.
Adjust red pepper chili flakes according to desire for hot and spicy flavor.
This lower potassium, low sodium sauce can be used as a substitute for tomato sauce in a variety of dishes. Try it on pizza, pasta, rice or as a topping for chicken •
