Thomas is a firm believer that any environment can be a learning experience if you're passionate about it. In celebrating, we were asked to showcase our very own Upstate roll in the Forbes “13 Creative Variations to try on National Sushi Day.”
Our Upstate roll is composed of tempura shrimp, roasted bell peppers, anchovy, topped with seared flank steak, chimichurri, and fried leeks. Chef Jose curated a beautiful flavor on this roll, and we are thrilled to be able to present it!

Not only is he talented, but an absolute pleasure to work alongside. Yudi is very hardworking and initiative is one of his biggest strengths!
During his free time, Chef Yudi can be found spending time with his lovely wife and beautiful children. You might also catch him watching a game of soccer, as he’s a diehard soccer fan!
