Thanksgiving is almost here! Try this healthy Blue Zones Project recipe.
🍠
COCONUT-MASHED SWEET POTATOES
🍴
INGREDIENTS:
-5 medium sweet potatoes (about 3 pounds), peeled and cut into 1-inch cubes
-1 cup regular or low-fat canned coconut milk
-1 tsp ground cinnamon
-1 tsp salt, optional
🍽
DIRECTIONS:
Place the sweet potatoes in a large pot and add enough water so they’re submerged by 1 inch. Bring to a boil over high heat, then reduce the heat to medium and cook until the potatoes are soft, about 25 minutes.
Drain in a colander and set in the sink, then transfer the sweet potatoes to a large bowl.
Add 1 cup coconut milk and mash with a potato masher or an electric mixer at medium-low speed until creamy, adding more coconut milk to get a smooth, rich puree. Stir in the cinnamon, as well as the salt, if desired.
Tip: For a different taste and lower fat, substitute half the coconut milk for fresh orange juice while mashing. Remember to add the ground cinnamon!

HPU’s wellness committee, A Healthy HPYou!, supports faculty and staff well-being by organizing opportunities like onsite massages, sleep challenges, an annual employee appreciation event, and more. 😆

Happy Halloween! Today is the perfect time to have a little fun while keeping safety and health in mind. Here are a few quick tips to make this Halloween a treat for everyone:

1. Allergy Awareness: If you're handing out treats, be mindful of allergies and offer non-food alternatives like stickers or small toys.

2. Hand Sanitizer is the Potion: With flu season upon us, consider carrying hand sanitizer and using it regularly, especially before and after diving into a candy stash.

3. Respect Boundaries: Be respectful of others' comfort levels and preferences. Not everyone may want to participate in traditional festivities this year.

Blue Zones is coming to Netflix! Travel around the world with author Dan Buettner to discover five unique communities where people live extraordinarily long and vibrant lives.
In the early 2000s, Dan Buettner collaborated with National Geographic to reverse-engineer a formula for longevity. He scoured the globe for years in pursuit of places where people live much longer than average, and the concept of “blue zones” came to fruition. To date, the expeditions unveiled Okinawa, Japan; Sardinia, Italy; Ikaria, Greece; Nicoya, Costa Rica; and Loma Linda, California, as blue zones with the highest rates of living centenarians.
