Local Ocean was honored again to be a part of Sen. Gillibrand's NY Farm Day in Washington DC. Local Ocean was part of the many great NY farms offering their great locally grown products. Local Ocean partnered with award winning chef Zac Young from the acclaimed David Burke Kitchen in NYC. LO Dorade crudo with a melon vinaigrette was served to guests in attendance. However, the item of the night was a smoked LO Branzino with egg yolk mousse, and pickled beet topped with a everything bagel bread crumb in a push pop. Everyone came for seconds and thirds and were excited to meet our star chef.

We have some new friends here at the farm. Local Ocean received its first shipment of Pompano today. All 20,000, are doing wonderful in our nursery.....more news to come.

On Father’s Day last year, Kate Frederick, a senior biologist at Local Ocean, bought some of our fish for a special meal with her parents. Kate’s husband prepared the simple yet delicious meal. He grilled the bream using nothing but butter and some salt & pepper and adding a bit of lemon juice and white wine. The family came together to celebrate a very special day over a healthy, nutritious meal. This was a way for Kate to honor her parents on Father’s Day and for them to enjoy the fruit of her labor at Local Ocean. It was the perfect meal for the perfect occasion… and surprisingly easy to prepare.

“When it comes to Local Ocean’s Dorade, less is more,” says Kate. “The fish has a clean, light taste and will absorb the flavor of anything you prepare it with. Keep it simple. Otherwise you can easily overpower it.”

The last time Kate and her husband enjoyed Local Ocean Dorade, they got four jumbo size fish. They added some Italian dressing and grilled the bream. Kate says they got one dinner meal out of it, her lunch the next day, and another meal for two the following night.

“One of the things I appreciate about working at Local Ocean,” adds Kate, “is that we have the opportunity to try the different fish we grow here straight from the tanks. Every once in a while, we would have fish prepared for the team just so everyone can have a taste of the fish we all care for day in and day out and know first-hand just how delicious and nutritious it is.”
