We PASSED our final Health Inspections + Occupancy Permit, which means we are CLEARED TO OPEN OUR 2ND LOCATION IN SAN GABRIEL!!!

We want to thank our General Contractor, David, for being so good at what you do and helping us get to this moment. This project has been a roller coaster that seemed would never end, but with your efficiency, sense of urgency, attention to detail, topped with being one of the friendliest people, made the ride enjoyable and would highly recommend to everyone 👌🏻 You are a beast, David! 🔥

We don’t just fry things. It’s not just a standard breading procedure. We take great pride in the amount of seasoned flour that is required for each katsu ingredient. Hand cracked fresh eggs. Hand molding and pressing of Nama Panko. Interestingly enough one can spend years learning how to properly utilize Nama panko and be humbled by its variability. We are blessed to use Nama panko that is sourced from Japan. People tend to view fried foods as a lower skilled craft for some reason, but the amount of hand molding, tempering, removal of excess egg wash/moisture, seasoning one side vs. both, long rests/carry over cooking is a never ending search for perfection. I can’t think of any other station we’ve made more adjustments to. Theres so much heart in the simplest of procedures and we are so proud of our chefs that take such pride to make our days a little krispier 🫶🏻
