Sausage and Tortellini Soup~
I used a lot of different leftover items in my pantry and refrigerator/freezer.

Ingredients:
1lb of italian sausage
1 medium onion
4 cups of chicken bone broth
1 cup of water
1 can of fire-roasted diced tomatoes (15 Oz)
8 cloves of garlic (minced)
18 Oz frozen tortellini
3 cups of shredded Kale
2 tsp of Italian seasoning
2 pinches of salt
1 pinch of black pepper
Shredded mozzarella and Parmesan cheese (to top soup with)

1. I started with dicing the onions and cooking them with the Italian sausage. I had sausage in casing- but you can buy sausage uncased. Ground sausage works best for this recipe.
2. Once the sausage and onions were cooked, I added 1 can of fire roasted tomatoes and it was brought to a boil.
3. Once the mixture was boiling, I added the bone broth, water, minced garlic and spices.
4. After about 10 minutes, I add the frozen tortellinis and kale into the soup and then brought it to a boil.
5. Top with cheese and serve wirh crusty bread.

Quick lunches as the weather is getting warmer 😉. Cucumber and tomato salad and pan fried chicken thighs. Chicken thighs were marinated in Greek yogurt, dill, lemon juice and salt.

Mediterranean Paradise ☀️
Perfect platter to take to a party and takes less than 20 minutes to make!
roasted red pepper hummus, tzatziki sauce, garden herb triscuits, pita chips, smoked almonds, roasted cashews, baby carrots, grape tomatoes and cucumber slices, kalamata olives and green olives stuffed with pimentos.

1️⃣. I would love to help you with your goals. Please respect that I’ve had to go through 7 years of education to be qualified to provide you with nutrition information, so I cannot write a free plan for you.
2️⃣. Yes, I do. Ideally I would eat no junk food since I’m a nutritionist. Even nutritionists have cravings. Nobody is perfect.
3️⃣. I charge for my services just like you would charge if you handcrafted something. Example: if you make jewelry. Would you make free jewelry and give it away to everyone who asked?
4️⃣. 10lbs in a week is extreme. We can work together to help you lose weight and sustain weight loss long-term.

🤔 I was asked what I consider to be “good nutrition advice” since there are so many diets, regimens, and eating plans out there.
🤭 Let’s not forget “influencers” with no formal nutrition background, promoting their restrictive “meal plans.”
🚫 they tell you, “you can’t have bread, pasta or rice.”
🗣 Here’s my response: Good nutrition is not about calorie counting, restriction and deprivation. Good nutrition is about developing a healthy relationship with food and nourishing your body.
❗️ PSA - Food is nourishment and VITAL for survival! Restriction isn’t the answer. Developing a healthy relationship with food is the answer ❣️
