I truly wanted to post something profound and inspiring and Iβm not sure there are enough words to describe the celebration of a woman in my eyes. So Iβm sitting here, reflecting on all of the women I have come across in my lifetime and I am so blessed to know some pretty fantastical ones!
We all have our stories that have shaped us and have made us into the women we currently are. I praise you for the battles you have fought and might be fighting in your life- they have made you stronger and into the woman you were meant to be. Just try to remember that you arenβt the only warrior... I donβt mean to diminish your fight, I believe itβs important to remember that if you are supporting other women that you need to recognize that all of us have our own personal battles.
I believe we are all unique individuals just trying to navigate our way around life the best we can with the tools we have.
Itβs a daily choice to support, embrace, love and admire women for who they are regardless of their flaws, or even perfections for that matter. I wait for the day that we are beyond gender and are all able to see the perfect souls we each are, simply wanting to be loved and respected. Not just today but every day. β€οΈ

Simple Roasted Butternut Squash (servings 4)
Ingredients:
~ 1 butternut squash, peeled, seeded and cut into 1β cubes
~ 2 Tbsp. olive oil
~ 2 cloves minced garlic
~ sea salt & black pepper to taste
Directions:
~ Preheat oven to 400 degrees F (200 degrees C).
~ Toss butternut squash with olive oil and garlic in a large bowl. Season with salt and black pepper.
~ Arrange coated squash on a baking sheet.
~ Roast in the preheated oven until squash is tender and lightly browned, 25 to 30 minutes.

~ Β½ Mile Run
~ 30 High Skips
~ 30 Rotational Walking Lunges (15 each side)
~ 20 Cross-Body Mountain Climbers
~ 20 Flutter Kicks (20 each)
~ 10 Inchworms
~ 10 Deck Squats

Decide to be healthier, fitter, faster and stronger. π₯πͺππ
Beef and Butternut Squash Stew (servings 8)
Ingredients:
~ 2 lb Butternut Squash, peeled and cubed
~ 3 - 4 tbsp Olive Oil
~ 1 large onion, chopped
~ 2lb lean beef chuck
~ 32oz Beef Stock (gluten free)
~ 2 garlic cloves, crushed
~ sprig fresh thyme, or dried
~ sprig of rosemary, or dried
~ 1 tsp salt
~ 1 tsp pepper
Directions:
~ Prepare the squash by peeling it, removing the seeds and cutting it into cubes.
~ If your beef is not already cut into pieces then cut it up into cubes, and the same for the onion.
~ Heat the oil on a medium heat in a large pot with a solid bottom, then add the onion and sautΓ© for a couple minutes, now add the beef and brown it for a couple of minutes.
~ Add the beef stock, herbs, salt and pepper.
~ Cook it on the stove top on a low simmer for about an hour with a lid on the pot, do not boil.
~ Finally add the butternut squash and cook for a further 30 minutes or until beef is tender.
