SOUTH CORVALLIS FOOD BANK OPEN THIS EVENING, THURSDAY JANUARY 18 FROM 5PM-7PM
We will be open our normal hours this evening. Since we've been closed for the last week, we anticipate a busy evening and we may be a bit short-handed due to volunteers who are blocked in by fallen trees. If you aren't in real need of food tonight, you might prefer to come in next week. There's no more ice forecast so we should be open our usual hours:
Thursday 5pm-7pm
Saturday 10am-noon
Monday 1pm-3pm
Wednesday 1pm-3pm
Our parking lot is still fairly slushy so if you're coming this evening, wear waterproof shoes with good traction if you can.

The roads are just taking too long to melt so the food bank will remain closed today, Wednesday, January 17. We really hate to stay closed but are worried about people slipping and falling trying to get there. Stay safe everyone!

The roads are still really icy and the forecast is for temperatures below freezing until Tuesday so the food bank will be closed on Monday January 15. We apologize for any inconvenience but keeping everyone safe is our priority. We should be open as usual on Wednesday January 17 from 1pm-3pm.
SOUTH CORVALLIS FOOD BANK CLOSED SATURDAY JANUARY 13
The roads are slippery and ice covered in Southtown with more ice falling at 8am. For the safety of our volunteers and clients, the South Corvallis Food Bank will be closed today, Saturday, January 13. Look for an update here about Monday's opening on Sunday evening. We'll open Monday if it seems safe.

Pantry item of the week is......Persimmons!
Persimmons are a delicious fruit that grows in the fall. The fruit is related to the date plum, the black sapote and the mabolo. This fruit looks like a small size orange which can be slightly oval, or acorn shape and has a thin orange skin.
HOW TO EAT PERSIMMONS
The most common way to eat a persimmon is to peel off skin, cut it in pieces and its ready to eat. The texture is more in between a peach and apple. Its firms and can be crunchy. There are different ways you can also eat persimmons. This includes using them in salads, pies, cakes and even making sorbet.

We recently got some bulk-packaged eggs and we need to repack them. We are currently accepting donations of all types of egg cartons (cardboard or plastic). The 12-egg trays are particularly helpful but we also take 6, 18 and 24 egg trays.

We all know about peas but not everyone knows how awesome pea shoots are. So they are our of the week!
Thanks to the Corvallis Environmental Center , we have an amazing to share that uses pea shoots. See below!
Pea shoots can be eaten raw (just toss them in that salad) or stir fried like in our recipe today.
Have fun with this item whenever you come across it. It's super and flavourful.
Peashoot Stir Fry
What you need
1-2 tablespoons olive oil
6-7 garlic cloves (smashed or minced)
4 cups pea sprout
¼ teaspoon salt (or to taste)
¼ teaspoon crushed red pepper (optional)
How to make
* Heat olive oil in a medium sized pan for about a minute.
* Add garlic and cook until golden brown and aromatic
* Add your
* Stir your pea sprouts so they cook evenly. Once they have shrunk in size and are tender, season with salt and crushed red pepper.
* Food is ready! You can eat this on its own or with some rice.

Our pantry item of the week is !
Rutabagas are turnip-like root vegetables, also known as swedish turnips. They are usually larger than turnips and less bitter. They have an earthy smell and a strong flavor.
HOW TO EAT RUTABAGAS
These vegetables can be eaten raw or cooked. Please peel the skin of your rutabagas before eating (especially if they are store bought) because they are usually waxed after harvesting to keep them from drying out!
To enjoy raw, cut into tiny pieces and mix into your salad or slaw.
Otherwise, treat like other root vegetables. They can be roasted, stewed, boiled, eaten solo or mixed with potatoes, carrots, etc.
BENEFITS: Rutabagas are great for one thing. If you guessed , then you guessed right! They have a higher fiber content than potatoes and are great for the gut. They are also quite low in calories and are a good source of potassium.
