What does it take to keep a cow happy?
Cow comfort is every farmer’s top priority. Veterinarians and nutritionists specialize in cow health and behavior to make sure the cows are enjoying their days on the farm.
“One of my favorite things about cheese is that you take relatively the same ingredients and you can make hundreds of different kinds of cheeses that have completely different flavor profiles. And all of that is achieved by, for example, how much pressure is put on the curd when it's forming in the wheel/block, how much time that it's in the brine tank, how long it's aging and what temperature it's aging at, what step in the process the salt is introduced, and how the curds are manipulated by heat or movement. It just all starts with milk, a bacteria culture, and rennet. Salt may be introduced at some point, depending on the cheese. With cheddar, we chop up the curd and mix the salt in by hand; with Gouda or Parmesan, salt is added through brine tank so it kind of gets the salt through osmosis. So, it's incredible to me how you can start with those same four ingredients as Parmesan or Cheddar, and you have a cheese that turn out like Swiss. And Swiss is unique just because it has an extra bacteria added and it's been incubated for 7 to 10 to 15 days (however long for the “eye” formation – the iconic Swiss cheese holes) at 70 degrees and then you get that whole sweetness profile that comes from that. Then you have a pretty salty young Gouda, that as it gets older, say nine months to a year, gets this sweet crystallization. So I think it's just incredible how, just through the science of manipulating these few factors, you get so many different varieties and flavors.” -Marlies Gill, owner, Appel Farms Cheese

"It is a business but it's also a passion. I mean nothing, nothing makes me happier than just being with the cows. I just love being with the cows. They just, they have an unconditional love. And as long as you take care of them they take care of you. It’s something about the world that we live in anymore - it's so hard to find [that unconditional love]. I mean yes, you've got your family, you've got your children but there's frustrations that we all have with all of them. But with the calves and cows - it's just such a genuine love and passion that I have when I come out to the barn to work. So nothing makes me crazier than when people accuse us of abusing them and not taking care of them - you know? We give them the best life we possibly can. All we want to do is provide a good nutritious product for the consumer and I can't think of a better way to do it than being a dairy farmer. So I can proudly say I am a dairy farmer. It's hard for me to say that we're earning a living because it's really just a passion. So yeah, I love being a farmer…maybe not in February when it's pouring rain sideways but I know that there's a July coming - I know the good is coming . "Growing up with kids here on the farm we know exactly how the milk gets from the cow to the table. The cows are our kids on this farm too. We always know what's going on with the cows: they're fed a healthy diet, the milk is natural - there's nothing added to it. It's healthy. Our daughters grew up on the dairy and the great bonus is they drink milk, eat butter, cottage cheese, and yogurt. What's great, they tell their friends "hey have you tried this?" or if they haven't they tell them "you should try this dairy product." I am really proud to have had my girls grow up on the dairy and eat dairy products especially since we know it's a great product. We're proud of our cows and our farm. It's a good thing!"
