"I never got the chance to study abroad during my undergrad years because it was financially out of reach. So, when this more affordable and shorter program came up, it was perfect for me as a full-time working mom. "Usually, I travel as a history enthusiast, this trip, however, was centered around culinary tourism[.] Whether we were dining in a cave-like setting while watching a flamenco performance or eating in underground tunnels once used by the royal family, every place we visited was steeped in history.
Every part of our itinerary was designed to offer an authentic taste of Madrid, highlighting how food can bridge social and cultural divides. This trip not only broadened my cultural and culinary horizons but also deepened my understanding of the power of food in creating shared experiences, which I believe will be invaluable in my future career."

“Marketing budgets for travel companies are more conservative compared to consumer goods, fast-food brands and even destination marketing organizations, which can afford large campaigns across all platforms,” Bogicevic said. “The greatest benefit for hotels is in earned reach from content creators.” Creator-led content on TikTok may land better with younger audiences, too, in effect driving more reach for hotels, according to Bogicevic.

Over the spring semester, five teams prepared presentations showcasing their ideas for Pitch Your Passion at Atento Capital in Tulsa, OK. The event culminated with the NYU Jonathan M. Tisch Center of Hospitality Hospitality Innovation Hub Incubator Pitch Contest - which is based on the 'Elevator Pitch' concept, popular in the venture capital community. Congratulations to all who participated!
From the students: "We were able to experience firsthand the community that has been established and watched as connections were being created. It was interesting to see the same energy as New York City, characterized by dreamers who work hard and move with a sense of purpose, but in contrast, they also take their time to experience life at its fullest potential. We also found interest in Tulsa’s preservation of its history, especially after getting to experience the Greenwood Rising, which honors Black Wall Street and educates visitors on the legacy of those who came before.
For students considering a study-away site, Tulsa will be an unforgettable experience. From the entrepreneurial scene, to its supportive community, Tulsa is a destination that will leave you wanting more and ready to make your dreams a reality. We have a newfound appreciation for Tulsa and are grateful for the profound experiences we had in just a short amount of time."

This paper examines the critical role universities continue to play in fostering innovation and bridging the gap between academia and industry in an era marked by rapid technological advancements and dynamic market landscapes. It makes the case for establishing an incubator program within a university offers and provides a blueprint for launching such a program and developing robust partnerships with industry stakeholders.
Specifically, it showcases how the NYU SPS Hospitality Innovation (HI) Hub incubator program channels the entrepreneurial spirit, fostering an environment that enables students to take their innovative ideas and transform them into businesses that are both viable and sustainable.

Last week Tisch Center students were in Accra, Ghana! Students began their journey by touring Maloka Market where locals shop and sell goods ranging from produce to electronics. Professor Gaffney even took the opportunity to practice balancing an empty bowl of goods as the Ghanaian woman do to transport heavy items.
Their next stop was the Independent Arch. The class waived the Ghanaian flag on the rooftop of the arch to respect the Declaration of Independence in 1967 and jumped in front of the arch to show excitement and support.
The group spent the last days of the trip with an early morning visit to Christianborg Palace which used to house the country’s parliament, as well as a visit to Ghana’s Ministry of Youth And Sports with Hon Minister Mustapha Ussif and of course visiting NYU Accra. Students were able to complete a walking tour of a fishing village, enjoy meals by the beach and visit Elmina's Castle too!

Earlier this week was 46th annual NYU International Hospitality Industry Investment Conference. The conference delivered unparalleled thought leadership through keynotes, general sessions, workshops and networking events. Top industry executives from CEOs of hotel brands to various investment and real estate executives discussed the latest trends, economic influences, and projections.
Nicolas Graf, Jonathan M. Tisch Chaired Professor and Associate Dean of the NYU Jonathan M. Tisch Center of Hospitality, said, “This year’s event carried on the tradition of engaging discussions and debates, emblematic of our industry’s dynamism and its innovative thinking and actions. We look forward to seeing how the thought-provoking ideas and themes discussed here play out in the coming months and learning more about their impact when we gather again for the NYU International Hospitality Industry Investment Conference in June 2025.”

The Tisch Center of Hospitality Madrid GFI was last week! Special thanks to our friends at NYU Madrid for welcoming us and supporting our students participating in the Culinary Tourism and Events Global Field Intensive summer course.
To kick off their trip, they took a stroll through the Parque De El Retiro and enjoyed a welcome lunch at Azōtea El Círculo with a spectacular view. Our students had a wonderful opportunity touring both the Hyatt Centric Gran Via Madrid and Thompson Madrid hotels. They got to see the various restaurants, venues, and a glimpse at the behind the scene operation.
Our crew in Madrid then attended “Apetit'Oh!” a cooking workshop where the whole group learned how to make 3 authentic Spanish dishes: Paella, Tortilla de papas, and Tarta de Santiago!
Next students visited historical cafés and restaurants. To start, our students had a traditional breakfast of “bocadillo de jamón” in café Comercial, an historical place with 130 years and a long list of artists and writers who visit frequently.
Our crew continued their culinary journey to Chocolatería San Ginés for some traditional churros! Opened in 1894, San Ginés has earned worldwide recognition because of their unique flavor and technique, pairing churros with a rich chocolate dip.
Students also frequented some local food markets like Mercado de San Miguel. They also strolled through historic Plaza Mayor, visiting Museo del Jamón and finally, made their way to Casa Ciriaco for lunch. Open for over a century, this Madrid restaurant is considered as an institution for traditional cuisine. All kinds of illustrious people have passed through its dining room and our students enjoyed dishes such as Pisto. As said by the restaurant, “comer es una necesidad, saber comer es un arte” = eating is a necessity, knowing what to eat is an art.
Students also had an incredible opportunity to tour the Palace de Real where they were able to see various rooms and learn more about the history within the palace.
The next day our students took an hour bus ride just outside of Madrid to explore Toledo, the "City of Three Cultures.” With its stunning medieval architecture, winding streets, and rich history, this hilltop gem overlooking the Tagus River never ceases to amaze.
As part of our students’ culinary tour, while in Toledo they visited Sucursal del Botero which is a family-owned business dedicated to bringing high-quality cuisine to the local community. Over the years, it has grown from a small neighborhood shop into a beloved destination, renowned for its curated selection, knowledgeable staff, and commitment to fostering a vibrant, welcoming atmosphere for both locals and tourists.
Students had a chance to tour an esteemed, iconic property in the afternoon — The Edition Madrid Hotel. A warm welcome speech by the Assistant General Manager and Director of Finance of the hotel was followed by a tour of guest room, rooftop swimming pool as well as F&B outlets, allowing the students to gain better insights into what makes the hotel unique and thereby a true local hallmark.
The students visited Mercado Anton Martin, where they enjoyed a market that showcased the incorporation of culinary traditions from Madrid's diverse immigrant communities, highlighting the city's multicultural identity, particularly with a strong Asian influence in the shops. It was a delight to see cultures immerse. This vibrant blend of traditions provided a rich, educational experience, deepening their appreciation for Madrid's culinary and cultural diversity.
On the last day of their culinary tour of Madrid, the students presented their findings to the rest of the group. Some topics covered were local markets, events, hotels, and trends; all centered on the 4 E’s of Experience: Entertainment, Educational, Esthetic, Escapist.
