PEACH HIGHBALL (10.5% abv) with vodka, peach two-ways, lemon, and bitters ๐
Yesterday, today, for the next few weeks, renowned Chamberburg peaches get trucked in to Pittsburgh. From dozens of farms that dot the landscape stretching out beyond the east hills, they roll into local grocers (๐ ) and restaurants and cocktail breweries. We work the fresh peaches two-ways: in a slow-poached syrup and homemade extract. With a touch of lemon and a whisper of bitters, our ode to the peach is back for the *fourth straight summer* and it gets better every year.
On draft now in our taproom here on Hamilton Avenue, sent out the door to local spots like , , ๐ค and this Saturday you can find us pouring during at ๐จGet out there; see for yourself!
We are excited to debut our newest drink tomorrow at , made in collaboration with : STRAWBERRY-PEACH GINGER BEER (0% abv) ๐๐
Emmai came to our first meeting with the drink idea, and we set out to make one that was as good as he imagined. We start with a San Francisco-style ginger syrup, which traps the sweet heat of ginger in cane sugar, and add slow-poached peach and strawberry syrups. We stir in lime super juice, a pinch of salt, and a measure of water. The result is a zesty ginger beer with an irresistible strawberry-peach combination. We will be tapping our first keg of this during Barrel & Flow Fest and will have it for sale in the taproom for a few weeks after the festival.
Special thanks to for the best peaches ๐งก

A juicy and cooling cocktail originally created in collaboration with Pittsburgh DJ + event producer for 2023โs , brought back because we loved it so much last summer. We set out to make a MANGO MOJITO packed full of the tropical sweet-sour flavors of fresh mangos backed by the heady and cooling effects of freshly-picked mint. We start with a batch of slow-steeped mango syrup and a measure of homemade mango extract, and mix those with lime super juice, cane sugar syrup, and piles of mint. A measure of US Virgin Islands white rum is added and, finally, the whole batch is filtered, chilled, and thoroughly carbonated.

A well-made highball requires most of the work upfront โ we zest, juice, measure, filter, chill, and carbonate our fresh ingredients so that only the fun part remains: high-quality carbonated cocktails poured from a tap, ready to be enjoyed over ice.

Back on the menu for a limited time: ๐ LEONA SPRITZ (9% abv) with our Waste-Not cherry amaro + champagne-seltzer.
Leonaโs Ice Cream () came to us with an assignment: find a way to use some spare Montmorency cherry juice in a cocktail. We love a good Repurpose, so we worked the juice into this crisp + refreshing spritz-style cocktail. The Waste-Not amaro uses the leftover cherry juice, along with citrus peels, Assam tea, and quinine to create a bright + bittersweet flavor. The seltzer gives the cocktail that champagne feeling. And the whole batch is filtered, chilled, and thoroughly-carbonated.

Our business model is based on a traditional craft beer brewery, so we try to walk in their footsteps and attend their events. A few years ago, we reached out to to see if our 'cocktail brewery' might be allowed to participate in their popular beer festival at Rankin's Carrie Blast Furnace. The festival was amazing -- well organized, vibrant, and eye-opening. So when Mark reached out with a new festival called Spirits of the Burgh, we jumped.
On Saturday, 2/17 in the heart of Downtown at for Spirits of the Burgh, we will be pouring tastings alongside 14 other local distilleries including some of our crushes + pals like , , , and ๐
Your ticket to the event gets you access to craft cocktail tastings, as well as an evening of dining and dance, with light fare available for purchase and DJ Samuel Andres spinning tunes all evening. for more information and tickets ๐ธ
