First time I have used spectrum in a beer. Spectrum is a hop extract used for dry hopping a beer without all of the loss from hops absorbing beer. This little 20 gram packet equals about 5oz of mosaic hops. All you have to do is mix it with beer that just started fermenting via the sample port and add to the top. So excited for this IPA!

The new unitank fermenter is all ready to add some beer to it tomorrow! I just finished cleaning with tsp and passivation. The deal that has on the 1/2 BBL fermenter was too good to pass up on! 🍻⛏️
We had a lot of people asking about hoodies. Because of this we decided to create a spreadshop store. These are all at cost and we are not making a dollar off of any item. Some coal mining history of the South Hills. ⛏️🍻
Coal mining in the South Hills area began in the mid-1800s, as mining ventures moved on from the depleted seam under Mount Washington. By the early-1870s, these mines reached the area of present-day Brookline. Known as the Oak Mine, shafts soon extended along the entire Saw Mill Run Corridor to Castle Shannon.
Much of the mining underneath the Brookline area occurred from 1900 through the 1920s, with some mines along McNeilly Road operating until the early-1940s. The result is that this region is 95% undermined, and those mines are still down there.
This Brookline Connection page documents, as best as we could, the history of the Oak Mine in the South Hills area, with photos, information, newspaper clips, mining maps and a bit about the miner's best friend, the canary bird.

I had an amazing time this weekend at for homebrews n blues! I met some amazing people, saw some friends from last year, and had some great beers. I was lucky enough to win first place for Girl with Peach Eyes (Peach Smoothie Sour - 5.5%). I also poured Black Blood of the Earth (Rye Stout - 6.5%). I can't wait to participate next year! 🍻⛏️

Cherry Cheesecake Smoothie Sour is on tap!
Plan B is the first of the Camp Beer series. This session hazy IPA is brewed with saaz, citra and centennial hops. There is also a healthy dose of Phantasm as well. We brewed this with omegas helio gazer yeast from the yeast bank.
The cherry cheesecake smoothie sour is blended in the Brite tank. Finished up right around 6.8% abv. We decided to blend with a 5 gallon corny keg with the cherry puree and other flavors with a T to the fermenter. It ended up tasting great. I can't wait to get this one into cans!
Kettle Sour is in the fermenter! The Omega Lutra yeast is pitched and will hopefully see bubbles tomorrow. This is a big beer that will be blended with cherry puree and some other goodies to make a cherry cheesecake smoothie sour.
First attempt at starting a frozen yeast bank. This is Helio Gazer from Omega. I harvested from a starter and used glycerin mixture to make the vials. Hopefully I did everything right and I can save some money on yeast! 🍻
A new Double Hazy IPA. It is our first time brewing with Helio Gazer from Omega Yeast. This beer uses cascade hops in the mash with Azacca, Mosaic and El Dorado at whirlpool and dry hop. The malt used is 2-Row, white wheat, flaked oats, and dextrin.

We just canned the smoked rye stout called Black Blood of the Earth. Full details on the beer coming tomorrow after the keg gets tapped. I am definitely enjoying the new setup for canning right off of the brite tank. If anyone is interested in seeing more about our canning setup please leave a comment. Another brew day in the books! This time we did a stout for the winter. It will feature some rye and cherry smoked malt as well as Columbus and East Golden Hops. I'm using the Omega Yeast Lutra yeast on this as well. I'm fermenting at a cooler temperature to hopefully get a nice clean fermentation. More updates to come. 🍻
Christmas came early! We have acquired a brite tank for the brewhouse. This is temperature controlled with the glycol chiller. I'm excited for what this will mean for the consistency of the beer moving forward as well as making packaging a lot easier. 🍻

Life has been busy so I'm doing a quick and easy hard seltzer. I'm going to try out the Moscow Mule beverage infusion. Also proper seltzer nutrient and lutra kveik yeast.
I was absolutely blown away by the amount of people who came out this weekend and supported all of the amazing homebrewers. I was completely shocked that the Brampburgh Ale IPA won second place and the Raspberry Sour won first.
