Congratulations to Chef Anjani of "Nat's Briyani" for being nominated as Singapore Top 100 All-Star "MasterChef".

The All-Star Chefs Awards are organized by IBF World MasterChef Club to give recognition to chefs that for many years make us happy by serving delicious foods. Chefs and cooks are the most amazing people in the world because they give us countless happiness by providing delicious dishes.

We all love to visit restaurants, cafes, hotels, pubs and whatnot. Even at our coffee shops and Hawker Centres, the person who cooked for us may not be termed chefs, but we are genuinely grateful to them for making an incredible meal for us.

Our Food Appreciation Team would like to show our warm thankfulness to Chef Anjani by giving recognition and appreciation to him the "Singapore Top 100 All-Star Chef Award".

In Search of Singapore Heritage Food & Top 100 All-Star Chefs…

Congratulations to IBF Singapore TOP Heritage Food Award winner “Shi Zi Tou” (狮子头) Chinese Cuisine for being awarded by our Food Appreciation Team as the best Chinese cuisine at Tampines Mall ⭐️⭐️⭐️

Hailing from Nanjing, the head chef of Shi Zi Tou exhibits his mastery of authentic Chinese cuisine through signature dishes like Mala Xiang Guo, Chinese Sauerkraut fish slices noodles and braised pig trotter.

The Golden Pot Soup Base is made with kampung chicken, nourishing old duck and deep-sea fish, pork bones supplemented with dozens of nourishing and fresh ingredients that are boiled for 8 hours over low heat.

One of their signature dish Ma La Xiang Guo is the most popular home dishes in the Chongqing area. It is not only famous for its many combined flavours (numbing, spicy, salty, sweet and fragrant), but also for its varied choice of ingredients: chicken, pork, fish, prawns, potatoes, lotus root, mushrooms, tofu, cabbage…

As it is a dish, people have the flexibility to adjust its spiciness and ‘numbing-ness’. It can be a meat dish, a vegetarian dish and even a seafood dish. As of to-date, we have nominated hundreds of Chefs & Hawkerpreneurs for the awards from respective countries since 2015. This year, we are giving out the World/Asia top 100 chefs’ awards from 16 countries.

This is also part of our "In Search of Heritage Gourmet" project.

Going out to restaurants is one of people’s favorite activities because they get the chance to taste the best cuisine from the chefs that work behind the scenes.

It’s a great opportunity each year for IBF to nominate the TOP 100 Chefs to receive the respective awards. This year the award ceremony will be held on 5th January 2023 with a Virtual & Physical Expo & Summit announcing to the world.

In Search of Singapore TOP Heritage Food Award Certification at Tiong Bahru Food Centre.

I wish to take this opportunity to thank Mdm Indranee Rajah 英兰妮, Tanjong Pagar GRC 丹戎巴葛集选区, Minister, Prime Minister's Office, Second Minister for Finance & Second Minister for National Development and Leader of the House 总理公署部长兼财政部第二部长和国家发展部第二部长、国会领袖 ; Tanjong Pagar Food Centre Chairman; F&B Entrepreneurs; IBF MasterChefs Club; and IBF Food Appreciation Team for witnessing the award certification to the Hawkerprenurs.

It is an integral part of the daily lives of everyone in Singapore, regardless of age, race or background. We ought to do our part to safeguard our intangible cultural heritage.

IBF Food Ambassadors started the “In Search of Heritage Food” program by visiting all the Hawker centres in Singapore to nominate those hawker food that’s loved by Singaporeans and be awarded accordingly.

Tiong Bahru is very famous for the quality and range of the local food fare. In particular, Tiong Bahru Food Centre boasts some of the best hawker stalls in Singapore. Congratulations to Peace Japanese Restaurant for creating the first Maotai Bulao "MTBL White Corn Salad", "MTBL Fugu Mirin Boshi" and "MTBL Kyushu Pork Yuzu Miso Yaki" that paired with the world's best Baijiu - Maotai Bulao.

Located in a Lifestyle Mall in a new building that promised an intimate and relaxed dinning experience that offers something different to local and foreign patrons to ensure a memorable food experience every time.

Chef Simon is an award winning chef from IBF World Gourmet Awards. Some of the recommended dishes are salad, pork tonkatsu, pitan tofu, swordfish tempura, Unagi rice bowl to Hokkaido clam soup were refined and delicious. The sashimi platter were fresh and the sauce for the Wagyu was awesome.

Kway Chap is a Teochew noodle soup consisting of flat, broad rice sheets (kway) in a soup made with dark soy sauce, served with an assortment of pork cuts including offal, pork belly, intestines, and pig's ears, beancurd, preserved salted vegetables, and braised hard-boiled eggs.

Braised Duck Rice was simply served with a thick dark sauce, side dishes of braised hard-boiled eggs, preserved salted vegetables and hard beancurd.

Kim Fa Fish Ball Minced Meat Noodle uses mee pok that are springy and smooth. My favorite is kway teow + yellow mee fish ball soup. If order "dry", the noodles are mixed in a soya sauce, chilli sauce and vinegar based seasoning with lard.

Each bowl of noodle comes with minced meat, fish balls, fish cake slices and a fish dumpling. The fish balls was bouncy and soft. Nothing beats having a hearty bowl of noodles for breakfast & lunch.

Congratulations to IBF Singapore TOP Heritage Food Award winner "Tiong Bahru Fried Kway Teow” for being awarded by our Food Appreciation Team as the best “Fried Kway Teow” in Tiong Bahru ⭐️⭐️⭐️

For 40+ years fried in the same traditional way. Fried with kway teow & yellow mee,
it looked a little bit light in color (compare to others with more black sweet sauce) at the first look but when i took my first mouthful the wok hei flavor rly shines through. A smoky aroma permeates the noodles, enhancing the dish’s sweet and savoury flavours.

I like how the whole dish wasn’t too oily and I could keep going back for more without leaving too guilty. The fried kway teow is loaded with all the ingredients such as chinese sausage, egg, fishcake, cockles & vegetable.

Congratulations to IBF Singapore TOP Heritage Food Award winner "Tiong Bahru Lee Hong Kee Cantonese Roasted” for being awarded by our Food Appreciation Team as the best “Roasted Meat” in Tiong Bahru ⭐️⭐️⭐️

Tiong Bahru Lee Hong Kee has a long history that stretches back to the 1960s. This stall attracts long queues for their Char Siew, Roasted Pork & Roasted Duck rice or noodles. They use pork shoulder, which is a leaner cut, for their char siew.

Most popular is their “3 Meat” Rice because you get to try “everything” on one platter. Roast pork was crispy and char siew was a good amount of lean and melt in your mouth fatty. Doused in a thick dark sauced gravy, it gave both a sweet and savoury flavour to the whole plate of rice. Duck was pretty decent as well.

This tasty Teochew Fish Soup: Batang Fish Soup and Atas Blue Cod Fish are managed by two hawkers which they have accumulated quite some culinary experience; one the ex-head chef of Naked Finn and the other from Perch at Jewel Changi Airport.

Cooked using fish, pork and chicken bones, there was a certain cloudiness in the soup with flavours both mellow-tasty and comforting.

Their menu is kept simple, apart from batang fish soup and a very enticing Deep Fried Pomfret with HK Soy Sauce, there is Seafood Soup Set that comes with rice and a side of their Homemade Ngoh Hiang. In Search of Singapore Heritage Food...

Congratulations to IBF Singapore TOP Heritage Food Award winner "Tiong Bahru Lor Mee” for being awarded by our Food Appreciation Team as the best “Lor Mee” in Tiong Bahru ⭐️⭐️⭐️

Lor mee is a Hokkien noodle dish from Zhangzhou served in a thick starchy gravy. Variants of the dish are also eaten by Hokkiens in Singapore, Indonesia and Malaysia. In the Philippines, the local variant is called Lomi or Pancit Lomi. The thick gravy is made of corn starch, spices, meat, seafoods and eggs.

At Tiong Bahru Lor Mee, It’s in the raw garlic, chili padi, coriander, black vinegar and sambal chili that dominate with the savoury sweet lor serving as the binder holding it all together.

Tiong Bahru Lor Mee use a thick flat yellow noodle that came with fish flakes on top of the usual braised pork, boiled eggs, Ngoh Hiang, fried fish, fried dumplings and garlic, garnished with coriander and chopped red chili.

The braised pork belly was tender but a little bit fatty. Fish flakes were fragrant and sweet and it’s something we always request more of if possible, as this is a top favorite amongst customers.

Congratulations to IBF Singapore TOP Heritage Food Award winner "Teck Seng Soya Bean Milk” (德盛豆花水) for being awarded by our Food Appreciation Team as the best “Soya Bean Milk” in Tiong Bahru ⭐️⭐️⭐️

Mr Loh Teck Seng is the second generation Hawker that took over from his father in 1985.

Soya bean curd or "tau huay" is a popular dessert and can be found in most hawker centre, however it's known that not all soya bean curds are made the same.

Teck Seng soya bean curds are hand made on-site at the stall to maintain the freshest. Each day around 60kg of soybeans to make 14 containers of soya bean milk and once it's completely sold, the stall will be close for the day.

Hwa Yuen Porridge has been whipping up bowls of fragrance porridges for the past 50+ years and has won many supporters to patronize their stall.

This Cantonese style porridge was cooked over the big fire and small fire for a prolonged time until it's smooth, creamy and flavourful where the rice grains completely melt down to the finest and smoothest texture. Skirt & Dirt is located at the sprawling Tiong Bahru Food Centre. There are loads of tasty food options at the stall that gives a little buzzer upon making any order.

The brand is started by Fabian Tan, who used to work as a Senior Sous Chef for a hospitality group. Filled with loads of exciting ideas, he wanted to serve up classic cheeseburger which gave rise to the cheese skirt burger.
