Roasted Mushroom Larb 🍄 🔥
Earthy mushrooms replace meat in this fresh take on traditional larb. A dish popular in the northeastern regions of Thailand, Larb is often a lively combination of cooked minced meat, fresh herbs, and a punchy dressing.
In this recipe, mushrooms are roasted until golden brown, and crispy around the edges, and once cooled, tossed with a mixed of cilantro, mint, basil and aromatics, including sliced scallions.
Lime juice and soy sauce keep the dressing tangy and savory. A subtle, nutty crunch from toasted ground rice is in essential element of this timeless salad.

Born in Saigon, Pink finished her schooling there then moved to the U.S. She’s been here for 22 years, and worked with us for 20 of them!
We love pink for her playful personality in the kitchen, and her attention to detail in cooking + baking.
Pink and her husband Bobby have one son who also lives in Boise.
She loves cooking, and has a a diverse breadth + a lot of talent in her culinary focus.
From putting together the perfect Vietnamese coffee, to whipping up a spicy & flavorful noodle stew, Pink delivers every time.
Pink will be launching a baking line within the next year. Keep an eye out for her one of a kind cookies and other mindfully baked treats!

Chef La’ai was born in the Samoa islands and grew up playing rugby and loving the island food. He went on to play rugby in college and made himself a name on the field. After college La’ai moved to Boise where he met a Boise legend, Shige 🍣. He started as a border/dishwasher and worked his way up to prep cook, then line cook, and eventually, chef.
Chef La’ai has been working with Mai Thai for three years now and specializes in top grade sushi 🍣. He also loves putting together seasonal dishes like chop suey for friends and customers.
Chef is a father, husband, and committed member of the community.

Meet Chef Aye.
Originally from Burma, Chef Aye has been cooking for a majority of his life. He’s been the Treasure Valley for 12 years with his wife and 4 children. Chef Aye has been working with Mai Thai for nearly a decade and always brings a smile and a playful energy to the kitchen. He loves putting together a perfect plate of Pad Thai, a customer favorite. He also loves going to church with his family when he’s not working.

Meet Chef Sinh.
Originally from Laos, Sinh speaks 3 languages, and acts as the creative director for new menu items at Mai Thai. He’s been cooking since 1980 and has been in Boise since 1992.
He initially worked with Shige in his famous downtown sushi restaurant. Sinh had been working with Mai Thai for a decade and has come up with a number of the delicious dishes currently on the Mai Thai menu.

Last night, Mai Thai had a fire that caused damage to our kitchen. Unfortunately, we will be closed as we undergo repairs. We do not have a time frame quite yet on when the repairs will be completed.
We will continue to keep you updated on the status of when we're able to reopen.
