Cucumber versus zucchini: which wins a place on your plate?

One is perfect on the grill, another pairs well submerged in your lemonade but both level up with a drizzled of olive oil & balsamic vinegar.

Raspberries, a new addition to the garden this year. They have perennial roots and crowns and will grow new canes every year.

Bees are the main pollinators for raspberries. How perfectly paired with our new hives!

Today the Nutrition Teaching Garden had very special guest visitors!

UIC students from the Urban Health Program braved the rainy day for a guided tour of the garden.

Some items we discussed:
how the garden is integrated into many
AHS nutrition courses,
garden volunteer opportunities,
the importance of composting,

It's that time again! Welcome this summer's Nutrition Teaching Garden caretaker: Yvonne Izquierdo. She'll be helping maintain the garden, upkeep the composts, and lead volunteer days.

Stop by and say hi! Yvonne is a mushroom enthusiast, avid composter, and vegetable whisperer.

Additional Details:
- Class is free and open to everyone at UIC
- All levels are welcome - no prior yoga experience required
- Yoga equipment will be provided
- After class, participants will enjoy spa water made from freshly harvested herbs, plus they will get to take home veggies and herbs from the garden

The UIC Nutrition Teaching Garden is already showing off its spring colors....get ready for a vibrant season!

Students are hard at work here at in the garden.... the warm temperatures this past week have prompted early radishes and spring peas to sprout🌱

This week, in Chef Renea’s Food and Culture lab course, students planted personal micro green trays to tend at home on their window sill.

In just two weeks, trays of kale and Swiss chard are nearly ready to be taken outdoors, with the help of the friendly gardeners at the

Tender seedlings should be given time to acclimate before transitioning to the outdoors full time, so they spend a few hours outside in the sunshine every day to prepare for this transition, also known as “hardening off”.
